Amis, meaning friends in French, is a modern high-end restaurant infusing avant-garde cuisine and molecular gastronomy with Japanese washoku elements. The earthy cooked oyster was served with yuzu cream sauce that balanced the flavors. Egg mustard had a firm texture, topped with loads of fresh crab meat and ikura bursting with salty and tangy taste.
The dashi with nori poured on the side of amadai matched seamlessly with distinct flavor of shungiku. Tiny and crispy fish scales. Lobster soup featured sweet and firm lobster meat and yumebijin rice with rice crackers. Intense soup made with solely lobster shells.
Main dishes were superb. The wagyu dish was made up with short loin - nice sear and simply melted in the mouth, and cheek - gelatinous and super tender. Lamb rack was juicy and soft with a mild lamb flavor, served with corn cake.
The refreshment prepared in front of guests served as a great palate cleanser. Wrapping up the meal was a yogurt cream-based dessert decorated with peach juice crisp. Bite-sized confectionery and espresso were the perfect ending to the luscious course.
