近來天氣時冷時熱,一不小心便容易惹上感冒,所以及時進補暖身才是王道。凱悅軒早前推出了這個「冬季時令精選」,友人得知已想一試;可惜大家各有各忙,早幾日才夾到時間;趕上尾班車。古色古香的格調,典雅細緻。首先上場的是「陳皮花膠水鴨羹」($198/位),內有陳皮絲、花膠、水鴨絲及筍絲,全部食材均切得非常幼細;湯底以陳皮、紅棗及薑等材料燉製而成,香濃且滋味;滲出淡淡陳皮香,吃畢滿身溫暖。脆香古法炆羊膝伴生菜片($398)~羊腩煲大家一定不會陌生,大廚便來個變奏版,搞搞新意思,賣相有點生菜鵪鶉鬆的影子。先將羊膝炆腍再落粉漿炸脆表面;食用時以生菜裹着羊膝、腐乳汁/炆羊汁一起食用,肉質腍滑外皮香脆,外加爽甜的生菜及惹味的醬汁,有水準兼具創意,值得一試!黑皮雞樅菌雙冬炒黃麖柳($428)~黑皮雞樅菌是食用菌中的珍品,肉厚肥碩、質細絲白,味道鮮甜,含人體所需的多種維生素等物質;竹筍清脆甜美;襯野味類的黃麖相當不錯。經大廚巧妙的安排;黃麖柳已沒有腥臊味,肉質幼嫩、鮮香可口。油鴨唐芹蘿蔔浸大芥菜($238)~甘香惹味的油鴨滋養了窩中菜蔬,使得清甜無根的蘿蔔及甘甜爽脆的水東芥菜索了其精華;而菜蔬的清甜味也融入湯
