Introduction
Reminiscent of a 1920 Chinese tea house, The Chinese Restaurant offers delicious dim sum and authentic Cantonese delights, including many must-try dishes for guests in town for the first time.
While the a la carte menu serves a range of Cantonese culinary traditions, the restaurant’s seasonal menus will tempt any devoted fan of excellent Chinese fare. In the summer, dishes are light and feature fresh, robust flavours; while rich, warming dishes dominate the winter menu.
The main dining hall of the restaurant is filled with natural sunlight coming in through floor-to-ceiling windows, while two private rooms with eight and 12 seaters are also available, with the former housing a private bar.

自從上次與朋友前來挑戰點心放題,都有一陣子沒來拜訪 尖沙咀凱悅酒店 既中菜廳 凱悅軒,是日相約友人前來餐聚,原來已換上了用「蔘」製作新餐目,以人蔘入饌,很特別,亦很期待 前菜選了人蔘餐目中既 紅棗人蔘豬手凍,賣相精緻,Q彈的口感,入面則是切粒的嫩滑豬手並滲出紅棗和人蔘的獨特香氣,還有黑醋啫喱,味道層次極為豐富陳皮脆鱔 也是大讚的!加入陳皮燒製,味道芳香無比,鱔肉厚身又爽口,一點泥味也沒有,真的很好吃!滋潤一下,有 杞子人蔘花膠鴿吞素翅,利用原隻頂鴿並釀入金華火腿、關西遼蔘及素翅等名貴材料來燉,再與花膠和人蔘燉三個小時以上,湯頭是極其清甜,並滲出陣陣人蔘香氣,加上厚身花膠,實在是滋補良物梅檻骨 乃這裡的名物,先將排骨蒸至軟腍,再炸至酥化,最後加入大廚自家製作的梅膏醬及檻角,入口肉質軟糯,酸中帶甜的,更是佐飯良伴哩豉汁蘆筍炒帶子 大大隻的日本帶子,爽口鮮甜,配以新鮮蘆筍,很清新的一道窩燒麒麟鮑魚人蔘雞飯 用鮑魚片、三黃雞件和北菇片等材料製作,並於飯內加入人蔘鬚粒,並再以鮑魚醬汁來焗,最後以「金華玉樹雞」的排列方式呈現於大家眼前,味道香濃人味,令人吃不停口再嚐甜品,吃完 蓮蓉焗布甸,無憾了

母親大人生日,同佢出去酒店食吓中菜先,呢間餐廳我之前食過幾次,同埋飲過茶,覺得無論環境同味道都唔錯,所以想同母親大人慶祝,點知朋友仔話質素差咗好多,因為已Book位,原本唔抱太大希望。有啲菜式真係冇以前咁好味,例如:叉燒以前燶邊半肥瘦,以前入口後好甘香好好食,但而家好似燒得麻麻。但值得一讚嘅係片皮鴨同以前一樣,都係咁好味又唔會太肥。

星期二放假又去食好西!今次跟老婆大人同埋朋友一齊去食人蔘嘅菜式,啱晒我呢啲有年紀嘅人食補補佢嘛哈哈。再次嚟到尖沙咀凱悅酒店嘅凱悅軒開餐,我同老婆大人都好鍾意呢度招呼周到又坐得舒服。先嚟第一樣人蔘嘅頭盤紅棗人蔘豬手凍!個樣靚到好似甜品咁,其實佢係用咗人蔘雞湯整出嚟嘅啫喱凍。人蔘雞湯啫喱食落又爽又滑,入面仲擺咗有皮嘅豬手肉、鮮人蔘粒、紅棗同埋蜜豆,口感超級勁豐富個味仲好鬼甘香,人蔘味有得嚟又唔會太濃好易接受到。老婆大人最鍾意食鱔所以就叫咗呢個陳皮脆鱔過佢嘆!白鱔燒得個皮好香脆魚肉仲好鬼彈牙夠晒新鮮呀,最特別嘅係佢加咗陳皮嚟燒,食落去多咗一份甘香嘅味道出面比較少食到。跟住就要食呢個杞子人蔘花膠鴿吞素翅!大大隻嘅頂鴿入面有金華火腿、關西遼參同埋素翅,放入去花膠人蔘湯道一齊燉,就算你係一「翅」唔食嘅朋友都可以盡情咁食。一次過可以食到香滑花膠同濃郁鴿肉,仲可以飲埋嗰啖甘香嘅人蔘雞湯,話唔滿足都係呃人嘅。呢個時候梗係要整碟正菜嘆吓!豉汁蘆筍炒帶子夠晒惹味喇啩,大大隻嘅帶子好有彈性同鮮味,加埋翠綠嘅清甜蘆筍好食到不得了。如果你係食肉獸呢個梅欖骨就一定要試!呢個排骨肥瘦啱啱好咬落去勁彈Q仲好有肉香,重點係嗰個自家製嘅梅膏醬味道酸甜開胃,加埋鹹香嘅欖角一齊炒好食到停唔到口囉。繼續送俾食肉獸有呢隻脆皮香雞!呢隻新鮮龍岡雞真係雞有雞味,不過我覺得佢嘅煙燻味仲出色,除咗雞皮好香脆之外嗰朕煙燻味去到雞肉入面勁濃香。雖然食晏晝但點都要整個飯先至夠飽肚嘅!呢一煲係窩燒麒麟鮑魚人蔘雞飯,除咗三黃雞之外外仲有鮑魚同埋北菇,個樣睇落好似中國名菜金華玉樹雞,但其實佢係一個人蔘雞煲仔飯。雞肉夠鮮嫩鮑魚都好彈牙,最正係吸晒鮑魚汁嘅飯仲混咗甘甜嘅人蔘粒,加埋係令到我冇可能食淨一粒飯嘅好味道。呢個酥皮流沙盞有菠蘿皮又有酥皮仲要有奶黃湯丸,成粒啪口感勁豐富層次感強勁真係好鬼正。最近天氣唔好成日雨粉紛飛好容易令皮膚氣管出現問題!呢個時候嘆碗香滑無比嘅蛋白杏仁茶抵抗皮膚氧化亦可潤肺止咳強化支氣管,呢度嘅蛋白杏仁茶做得好香濃勁多滑嘟嘟嘅蛋白,賣$58碗隨時平過喺出面糖水舖食。

好友約食午餐,選址在她最愛的凱悅軒,無可否認這裏環境舒適、位置方便、最重要食物水準出色,難怪她會這麼喜愛!👍🏻原來每隔一段時間這裏也會有新的主題,而今次的主題係「人蔘的菜式」,有效日期由即日起至4月30日供應。首先上場的是這味「紅棗人蔘豬手凍」,外形和水晶肴肉有點相似;不過選用嫩滑肥美的豬手作為餡料,大廚先把連皮帶肉的豬手切開,再把鮮人蔘切粒、加入紅棗和蜜豆籽一同放進人蔘雞湯內製成果凍,最後在表面放上黑醋啫哩,增添口感。第二味是「陳皮脆鱔」、鰻魚食落鮮嫩肥美,火燒過後表皮酥脆,配上陳皮獨有的甘香,不但有效減低油膩感,而且非常好吃。第三味是「杞子人蔘花膠鴿吞素翅」、據說靈感來自懷舊手工菜「仙鶴神針」;大廚選用體型效大的頂鴿,首先去除鴿內的胸骨,再把金華火腿、關西遼蔘絲及素翅釀入其腹腔之中同燉;鴿肉嫩滑多汁,湯底清甜滋潤,加上味道甘香又濃郁的遼蔘,頗有驚喜。第三味是「豉汁蘆筍炒帶子」,採用大大隻刺身級的帶子,肉質肥美,軟腍鮮甜;蘆筍爽嫩翠綠,味道調配適宜,不錯吃。第四味是「梅欖骨」,大廚先將排骨蒸煮約三小時至軟糯,再以大火酥炸至鬆化,配上自家製梅膏醬及欖角,口感酸酸甜甜,什是開胃;如配上一碗白飯更好。 第五味是「脆皮茶香雞」,大廚首先將原隻龍崗雞慢油炸熟,把香片及普洱混入白飯之中,再將雞隻燻製大約十分鐘,令雞肉吸盡白飯及茶葉中的茶香;最後把整隻炸至金黃酥脆,食落肉質細嫩又多汁,令人回味無窮。第六味是「窩燒麒麟鮑魚人蔘雞飯」,以鮮嫩的鮑魚片、配上三黃雞件、甘筍片、北菇片,舖在加入人蔘鬚粒的米飯之上,再拌入甘香濃郁的人蔘鮑魚醬汁焗製而成;新鮮熱騰上枱,飯粒飽滿分明而且入味,令人有添食的慾望。😋甜品選擇太多,除了每人各自點了一份之外(我選了薑茶湯圓),另外加多件這裏最出名的酥皮流沙盞及軟糯煙韌的椰汁棗皇糕。薑茶湯圓~大大粒的芝麻湯圓,外層軟糯香甜,配上微辣的薑茶,食完全身溫暖又飽肚,𣎴錯。開開心心和好友談天說地,又可同時享用美食,真是人生一樂也!😋#凱悅軒(香港)地址: 香港尖沙咀河內道18號香港尖沙咀凱悅酒店3樓電話: +852 37217788
