這樣高興的日子,當然少不了點支清酒喝喝,選了易入口的獺祭,但酒精濃度頗高,才兩杯下肚,已有醉醺醺之感覺,哈哈~

澳洲鮑魚(500g)
超級大隻的澳洲鮑魚,上碟時廚師還在碟上灑上一把鹽然後點火,增加視覺效果。鮑魚肉質爽口彈牙而有嚼勁,伴以香濃的鮑魚汁,美味。

隨後,還奉上另一碟鮑魚裙邊,味道香濃之餘,煙煙韌韌。

澳洲M8 和牛肉眼(180g)伴溫室野菜
Medium的澳洲M8和牛表層煎得微焦香口,還有蒜片、野菜等伴碟,單看已令人垂涎。

雖然表層微焦,但肉心呈粉紅亦帶血水,入口未至即溶,但卻非常鮮嫩,牛味濃郁,好吃。伴碟野菜有露筍、冬菇及南瓜,新鮮、清甜、美味。

海賀炒飯
炒飯加入魚仔,非常鮮味,而且廚師還特製一片香口飯焦,另整碗炒飯不但美味,口感更加特別,讚。

不得不提今晚為我們烹調美味鐵板燒的就是鐵板達人長谷川克哉先生,原來長谷川先生是日本鐵板燒海賀的開國功臣,能一嚐如此大有來頭的大師級手藝,真的很幸福。

Kaika is located on 19/F and has great views of the harbour front as well Kowloon peninsular. The decoration is also very nice. Service is not bad either. So in terms of location, decoration, view and service, it is very good However, in terms of food, we would only give it a bear "pass". We ordered a 2 persons lobster set teppanyaki dinner. On the positive side, the raw material is very fresh . Also, unlike other teppanyaki restaurants, great efforts are made on food and dish decoration

. Also, unlike other teppanyaki restaurants, great efforts are made on food and dish decoration.
The chef is also good at making the food not too oily which for once makes teppanyaki more healthy.


However, what went wrong is food temperature. I was greatly disappointed with the temperature of the food that was served. With most teppanyaki, because food is cooked in front of you, when served they are usually very warm. However, during our experience at Kaika, the lobster and the fish served were barely warm partly due to the time spent on dish decoration and cold sauce poured on them
. Because they are seafood the low temperature actually made the dishes quite untasty
The steak and fried race which came subsequently were fine and the fried race was actually quite nice


So overall, the deco and view are spectacular. But with the hefty price tag (HK$2600 for two persons with no alcohol), if I am going for quality teppanyaki food I have other good places to choose.

The first thing that you'll notice at this place is the breathtaking view of Victoria Harbour, the second is the portrait-looking refrigerators in the wall with a huge block of Wagyu beef. As with many teppanyaki restaurants, this is not a cheap place. The cheapest dinner set for 2 is around HK$1330 and that's only if you eat sliced beef. I've been here twice and have had the normal scallop/prawn/beef set and the lobster set. I'd say the scallop/prawn/beef set is actually better than the lobster one. The scallops were very fresh and sweet and were made in a Japanese wine sauce, which the chef told us we could drink (tasted a bit salty just drinking it though). The second thing that was very good was the prawn - the chef literally cooked all parts of the prawn and made the shell so crispy that you could eat the shell and all! The chef also reassembled it into a prawn-like thing so that was a nice touch.

Both the lobster and beef sets come with foie gras. The foie gras was cooked with a very crispy outer layer and served with pineapple, which was nice to balance off the fattiness.

As for the beef, we tried the beef slices rolled with garlic and spring onion and the US steak. Both were very tender and tasted very good. They also gave us a selection of salts to choose from - sea salt, Japanese plum salt and this other type of blue salt which I forgot what it was.

The fried rice with the beef set was a bit of a let down, but the fried rice with the lobster set was VERY good because it was mixed in with some sakura prawns, which made a huge difference!

We also had a sashimi platter which was very fresh - it came with toro, large botan prawns and some other types of fish. They also cooked the prawn heads in our miso soup afterwards.

The service here is generally good and the chefs do put an effort into making your dining experience enjoyable. Pricey yes, but I guess teppanyaki with a view comes at a price. There's also a VIP room with a teppanyaki table with a harbour view too if you really want to impress your guests.

燒鱈魚配牛油香草汁。伴菜茄子、車厘茄、脆肉瓜、香草牛油汁加埋橄欖油,全部撈埋,十足一個暖沙律,新鮮、多汁、爽口、棉滑、醒神開胃混於一身,美味 ﹗鱈魚外脆內嫰,外層煎到金黃香口、內裡則保持嫰滑多肉汁,good ﹗

活波士頓龍蝦,仲識郁同札札跳架 ﹗一般應該先展示比食客見到係活既先會開始烹調,但今次依位女師父忘記左喇。烹調過程中不外乎拆肉炒球、攞蝦膏做汁。大多日式鐵板燒都會再灒酒搶一搶火,助助慶,讓大家精神吓,又可以讓龍蝦肉更爽更香,但原來此店一向唔咁做架呢。

波士頓龍蝦球配蝦膏龍蝦汁,個醬真係好鮮好正好美味,一滴不漏放晒入 ﹗龍蝦球爽口鮮味,炒得香口非常,而且仲保存到淡淡海水味道,全晚最好食既一道菜,好好好食 ﹗

日式香煎鵝肝配鮮菠蘿,好特別既配搭,可減去油膩感。鵝肝未算非常肥美,加醬油同吃,還可以啦。因為鵝肝較油膩,所以大多會配生果或帶酸既醬汁將其油膩感降低。

冷冬瓜沙律,配菜有生蔥段、火箭菜、生京蔥、木魚碎,奇怪地我今次完全無反胃既感覺,居然可以將我由細到大都食唔到既生蔥生京蔥全部食晒落肚 ﹗係咪種唔同呢?冬瓜用日本醬油煨得入味,口感軟腍腍,好熟識既味道,好清涼 ﹗好好食 ﹗

美國牛柳,我當然要最嫰既 3 成熟,朋友仔要食 5 成。肉質入口非常嫰滑,肉汁豐富。係淡口啲囉,仲唔夠熱,有部份仍然係凍架,似乎依位女師父有啲牛準喎,我都知 3 成係好難做。牛味好淡,要加點醬油添味,都算合格啦。伴菜既露荀爽口清甜、冬菇肥美充滿水份、蕃薯粉口帶甜,good good good ﹗全部清晒,好味。

麵豉湯,熱騰騰,我最愛飲湯 ﹗好快又到美聲喇,係時候清一清口腔,飲淡熱湯,添點醃咸左既白蘿蔔、青瓜同牛蒡,好舒服,好優悠既感覺。

蛋炒飯,只加左少量青椒粒同洋蔥粒,無其他材料喇。姐姐見我話唔夠飽,尊登免費送我地每人一隻荷包蛋,咁我唔客氣喇,多謝。個炒飯無咩味道,總之早前食多幾道菜啦。蛋炒飯,無味道,就算加豉油都無補於事 ﹗

柚子雪巴,酸酸地帶甘味,我鍾意 ﹗最啱唔愛甜既我,甘甘甜甜真係幾好味。食左咁多油膩食物,清清腸胃最好。

今年的生日午餐選擇在海賀食,原因就是希望在寧靜而又境觀好的環境享用我的午餐入到餐廳內,感覺開揚舒服,而且處於高層,可一覽尖沙咀一帶海景,立刻加分我叫了一客簿燒牛肉定食,食物各樣水準只是一般,牛肉太簿,但炒飯不錯,夠乾身,但全部份量也不多(通常日食也是如此)所以不是很飽~原本以為會有日本師傅在我面前即埸煮食,可惜沒有,有點失望~但整體而言也值得一試~

It was our first visit to Kaika, we expected nothing but a fine dinning, somewhere to relax and enjoy good food and atmosphere.

Anyway, let's talk about the food first. We didn't order the set menu as nothing on there seems appearing. Teppanyaki set menu also comes with lots of salad, vegetables, soup and rice, with so little main course. We wanted to eat proper food.

We ordered a live lobster and it was the best that i have ever had. The teppanyaki chef was very good. He cooked the lobster perfectly well and presented it nicely on our plate. I would definitely order again for what it is. $1800 worth it.

Two tiger prawns, the best way I have ever tried to eat the prawn head this way. He cooked it with oil for a while so that the prawn head is crispy and I can eat it as a whole. Delicious.

Honestly. Horrible. Horrible. Horrible. If it is not the view and the food make it up. I don't really think it is worth mentioning on openrice.

The minute we walked it. The receptionist gave my husband a head-to-toe look, I wanted to walk out already. Then she asked if we have made reservation and we said no. There was EMPTY and it was 6.30pm. What is your problem? She asked around and messed about then we got seated. I felt so unwelcome and it was wrong.

Anyway, then she asked if it is our first visit. Shorts are not allowed for men. At the point, I wanted to turn away, but then she said she gave us an exemption. WOW SHOCKING!!! Yes, it is summer and he is wearing shorts, but it is Hugo Boss shorts with Camper shoes. What is so bad about it? He has a Fred Perry top on and I think he looks perfectly well. Not like he is on a beach or something. Anyway. Let it be.

We seated down. No tea. No welcome. No smile. No atmosphere. NOTHING. We ordered our food with a waiter doesn't speak English very well. Anyway, let it be.

I can go on… but it is the food I am after and I think it is good. The bill is $3456.00 for 2 of us. The food makes it worth the price, I will go back for that. However, we had to pay $10% for service that I didn't really get. Paid $314 for nothing, so allow me to moan a little and give you a warning if you do plan to go there. Be prepared.

食完嘢, 上茶, 果刻先諗, 係喎, 成餐飯, 茶都冇杯, 宜家先俾杯茶。當我正想飲之際, 恐怖嘅事發生了...我個茶杯上面佈滿咗蜘蛛網!! 好彩d燈光唔係好黑, 如果唔係我已經飲咗。當時我直頭呆咗!!
蟑螂, 蒼蠅, 我都明白同接受到, 地方不夠乾淨, 蟑螂, 蒼蠅自然會爬入去, 但蜘蛛網喎......隻杯應該係攏喺到好耐冇用過, 冇洗就給客人用。男友立刻叫另一經理來看, 那經理都呆咗, 後來走來話唔好意思, 都唔知點解...唉, 佢果刻佢講乜都係廢話。我真係接受唔到一間咁嘅class嘅餐廳, 會有d咁嘅事發生...我地都唔係搞事嘅人, 佢講乜我地都冇出聲,心諗以後都唔會再來。之後佢都識趣地問我地想唔想食雪糕。

呢間餐廳同隔離間harlans係同一集團, 之前喺Harlans book 枱嘅經驗都好差, 我都話過唔會幫襯。The One 19樓, 唔會再去!

Met up with K and G for lunch. First time lunching with K, G's friend. We sat at the teppanyaki bar overlooking...Kowloon. I couldn't really see the buildings below, I just knew the view was great - no obstructions (yet). According to G, upon her request, the restaurant had invited the Japanese chef to come back and prepare the meal for us. Cool - didn't know you could make such a request, especially when we're only small potatoes. Not sure it makes a huge difference from the lay consumer's poin

Environment:
Dimmed, mysterious entrance. Not grand at all, but dark. It led straight to the sashimi bar, which we walked straight past, to the teppanyaki bar. You could choose to sit at the bar, watching the chef's equipment clattering away on the hot plate; or, alternatively, you could sit yourself at the normal tables and the waiters would bring your food to you as it's made. Prefer the former.


Service:
Nothing special. One the of waiters was rather cocky, but not offensive.

Food:
We chose lunch sets priced around $200. Could've put photos of the menu up but I've depleted my photo quota for this entry already.

Surprisingly good, and different. It's not the type of eel you always get with cheap bento boxes. Those are slimy, very thin, with very thick skin. This one was very meaty, fresh (not fishy), and firm. Not rubbery like some grilled eels I've had, if you get what I mean. I used to love eel when I was very young, but ever since I learned what it really was - as in, saw a live eel slithering about in the aquarium - I grew apprehensive, and stopped eating it altogether for many years. The notion of eating something snakey, like eel, was unnerving. (I don't eat snake either, for that matter, or sea cucumber.) It was seasoned perfectly, juicy, not too salty. Perfect when paired with rice.

Lovely. The chicken itself was very tender, didn't have the frozen chicken staleness, juicy, slightly charred on top (skin crisp and delicious). Though I had some suspicions that the middle of the chicken wasn't cooked through. Slightly pinkish in the middle. But I couldn't care less. Sauce: perfectly seasoned, not too salty, can be eaten on its own without rice. (I think that's how you're supposed to eat it because the fried rice isn't served until later.

I'm a huge fan of carbs, but this isn't what I fancy. Throughout the cooking process we thought the rice would have a lot of flavour and would be quite savoury because the chef kept adding some kind of soy seasoning. Probably soy sauce - very bland? Because the fried rice was not flavorful and was much drier than I would've preferred. Basically a very bland, uninteresting fried rice, plump dry grains. I didn't like it much. A matter of personal taste. I like pearl rice served moist.

Although I love vegetables, I'm more a fan of greens that are actually green in color, and also substantial ones with lower water content. I do not, therefore, like bean sprouts. I am not, therefore, a big fan on this particular dish. Bland, watery and more peppery than I would have preferred. But it's just me. I'm sure the average unbiased diner would be accepting of this dish.

Not a big fan of chestnut. Not a fan of mousse either. But as a dessert to finish a meal this one was acceptable. I finished the whole thing. The chestnut puree wasn't too sweet and was quite fine, as in, smooth. It was a light cake. Again, there's nothing special about this cake - it's just a mediocre dessert.

Conclusion:
I can entertain the thought of a nice treat at this place occasionally, but only oh-so-occasionally because it's quite far from home, and it's not THAT impressive. But the view is pretty nice by day, I'm sure it's even nicer by night. Best teppanyaki you will find at 花盃(CWB).

已經九成飽,終於到炒飯,鐵阪燒既炒飯係幾飽我都要試既一項。炒得夠乾身,不過好似個味淡左d,不過都係食到見底的炒飯。唔要炒飯可以加錢轉壽司,是日送上的係拖羅、象拔蚌、海胆同青瓜卷,海胆跟之前食到既一樣水準,夠鮮甜;拖羅肥美,不過無咩魚味;象拔蚌夠爽,帶點甜,係三款之中最好。埋尾有麵鼓湯,鹹左d,已經夠飽都無再飲落去既興趣。

食物,當然滿意,喜歡這裡的創意,好似藍莓鵝肝,至今依然回味。服務,日藉師傅幾功架十足,原先都想俾五分,不過果位十分緊張但係得五分功夫既神出鬼未既侍應生,我真係頂佢唔住。環境講左,坐到靠窗果邊真係無得頂,個人都開胃d。價位,跟其他鐵阪燒都略為偏高,不過有時總要豪一次。係滿意既一餐。

有客請食飯,我冇睇過MENU,唔知咩價錢,但D野食水準好高(此餐搵來日本食材BUYER張羅,唔知會唔會好D),因為食左太太太款,所以只會節錄好好食同麻麻地既野飯前小吃有幾款,日本番茄最好味,好甜,好清新隔離店同集團既芝士PIZZA,超好味,係好傳統既薄批,加上我係CHEESE LOVER,十個讚到上刺身,有帶子,TORO,蝦同海膽,仲有魚鮫TORO(剛剛睇完張智霖做既日本料理劇集介過,就即刻食到..呵呵),真係超超超正,極度肥美,入口即溶,好食過TORO3倍(不過有D漏)我食左3大塊,而TORO只食了兩塊(死啦,以後食唔番唔知點算),真係一試難忘!!!!!!!另外蝦都好正,一般蝦會有少少滑"SAN SAN",但呢個一D都冇,好爽,反而帶子同海膽麻麻地,唔係唔好食,不過D味好淡...鐵板燒出場,鵝肝已分好晒(即一件分幾份上),唔得,老左,唔夠厚唔夠FULL,可能我分左個邊位...羊架都係唔得,冇乜水準,最有驚喜既真係估唔到,原來係鰻魚,普通店會同鰻魚汁燒甜甜地,但呢次只係用鹽燒,真係好好好味,係第2名,用鹽燒真係完全帶到魚味同鰻魚既肥美,平時用汁其實蓋左D鮮味,所以我都好LIKE IT!

新年期間節目太多太豐富,一直要排到初十,才有時間與家人開年。多謝OR的免費戲票,當日中午先同媽咪到The ONE看戲,戲前就來這裡吃午餐,原因是媽咪從未吃過鐵板燒!  位於19/F的海賀的暗黑店面很有格調,同時來幫襯的人也多,當日午市booking全滿,還好前一晚我醒目訂了檯。進店後要先經過壽司吧檯,再經過鐵板燒檯,就抵達我預留的海景位。當日只是陰天,但高層的海景已經十分優美養眼,換了是晴天,相信景致會更迷人呢! 除了開揚景觀,也很喜歡店內簡約有格調的裝潢,以及各式和風餐具,如檯上精緻的豉油盅與牙簽盅。 媽咪愛吃牛,美國薄燒牛肉午餐($168)是必點的;另外也想點一份美食醫生介紹的自選壽司定食,可惜那只限週一至五供應,另一份就改選香蔥吞拿魚腩飯定食($168),所有食物一起分享。由於每份午餐都附有非常豐富的配料,侍者送上鐵板燒的醬汁後,然後慢慢送上各樣漬物、前菜、沙律、湯等,瞬間檯面上埋滿食物! 先吃屬於鐵板燒的前菜,這天是菠菜野菌,要讚野菌鮮香滑溜,配上菠菜十分清新! 另一款跟魚腩飯的定食前菜是Hijiki(謝小meg資料),據講是某種海藻根部,口感微帶爽帶脆,我很喜歡!又有每位上的

香蔥吞拿魚腩飯定食($168),所有食物一起分享。由於每份午餐都附有非常豐富的配料,侍者送上鐵板燒的醬汁後,然後慢慢送上各樣漬物、前菜、沙律、湯等,瞬間檯面上埋滿食物! 先吃屬於鐵板燒的前菜,這天是菠菜野菌,要讚野菌鮮香滑溜,配上菠菜十分清新!

),據講是某種海藻根部,口感微帶爽帶脆,我很喜歡!

又有每位上的沙律,蔬菜與車厘茄均色澤鮮明奪目,用料是看得出的新鮮,加上開胃的微酸油醋汁,又是相當好吃!

之後其中一份主菜---美國薄燒牛肉卷上檯了。美國牛向來肉味較濃,因要了五成熟燒得粉紅柔嫩,味道挺好,再加上蔥花、蒜粒,食味豐富、口感上佳;而且不得不提,一份共有十多件牛肉卷,份量挺多吃得人很飽足!

隨鐵板燒來又有麵豉湯,我向來對此物興趣不大,縱雖然海賀加了蘿蔔令口味較清新;另外同上的漬物則爽脆開胃,牛蒡口感尤其吸引。另一邊又有跟定食的茶碗蒸,則成為愛蛋的我之囊中物,要讚蒸蛋中除了蝦、帶子、銀杏等,又加了少量檸檬皮絲,令口味更見清新,幾喜歡的!

另一主角----香蔥吞拿魚腩飯也上場了,相當肥美的吞拿魚腩,配上飽滿晶瑩珍珠米飯,以及適量香蔥,味道真是一流,較Doraya的出品要優質美味多了,令平日不碰米飯的我,少有的吃個不停。魚腩飯又附上香甜多汁的玉子,令蛋迷更加滿足了;此飯唯一要讚是份量實在過多,兩母女食完後真的飽到傻了...

差點忘了講,魚腩飯定食還跟一碗清湯蒿麥麵,同時附有蔥花及海帶,食客可隨意添加享用。在豐腴肥美的魚腩飯後,來幾口清淡怡人的蒿麥麵,確能收消滯之效,後來也幾乎給我吃光。

另一邊廂,還有一份鐵板燒炒飯。優質飽滿的珍珠米,炒得粒粒分明又香口,本來是幾吸引的,但由於太飽只能全數打包。

主食過後,每份午餐還有一份自選咖啡/茶或甜品。由於媽咪太飽棄權,結果兩份都由我享用! 餐飲選了熱咖啡,水準只是一般,幸而配上的曲奇鬆脆可口兼有香濃朱古力粒,很好吃;另咖啡附上熱奶,也是一個細心加分位。

海賀的消費比一眾老牌鐵板燒店如和三昧相宜多了,質素卻一點不輸蝕,相當抵食也值得推介。尤其看到2/14的情人節晚餐定價高達$1,380/位,更覺今頓午餐是超值體驗。很巧同日食友也在facebook分享了銅鑼灣的妹店海幸的食照,遲些有時間也想去一趟!

位於尖沙咀 THE ONE 商場的鐵板燒海賀 Teppanyaki Kaika,是好友阿龍的「飯堂」--他幾乎一星期內有三、四天在海賀午饍,與壽司吧 Sushi Bar 的劉師父熟稔。這天我和 Eric 跟他到海賀吃壽司 Set Lunch,坐在劉師父面前。壽司吧枱上,每人一隻碟子,等着劉師父即做即吃。Set Lunch 的八件壽司是可以自選的;我們當然相信劉師父替我們安排哩。首先是帶子刺身、Kinki 魚和池魚壽司。接着是香軟嫩滑、鮮甜多汁的吞拿魚腩Toro及油金魚腩 Hamachi。一件比一件精采。海膽壽司堆得滿滿地,用料十足,且還是一級佳品,味道不凡;紫菜爽口鬆脆,齒頰留香。右邊是火灼左口魚。生吃時最煙韌有嚼頭,誰知火燒之後竟變得入口即溶,是無可比擬的鬆化口感;兼且火灼逼出油份,令至食者滿口清甜魚油,十分滋味。正當大家讚嘆着海膽之鮮美、左口魚之鬆化,劉師父的終極壽司--燒海鰻--出場。原來劉師父最擅長煮海鰻,曾在日本進修連續三個月,就是獨孤一味專學鰻魚,研究出如何把海鰻煮得前所未有的鬆軟綿滑,嫩得完全不用咀嚼就可吞進肚子。咱們大快朵頣,差點連舌頭都吞下去。可以選擇烏冬或日本燉蛋;

海膽壽司
堆得滿滿地,用料十足,且還是一級佳品,味道不凡;紫菜爽口鬆脆,齒頰留香。

右邊是火灼左口魚。生吃時最煙韌有嚼頭,誰知火燒之後竟變得入口即溶,是無可比擬的鬆化口感;兼且火灼逼出油份,令至食者滿口清甜魚油,十分滋味。

原來劉師父最擅長煮海鰻,曾在日本進修連續三個月,就是獨孤一味專學鰻魚,研究出如何把海鰻煮得前所未有的鬆軟綿滑,嫩得完全不用咀嚼就可吞進肚子。咱們大快朵頣,差點連舌頭都吞下去。

Set Lunch 滿足不了我們的好奇心,叫劉師父再做點拿手的東西,他便弄了個碎吞拿魚卷 Chopped Tuna Roll,雖不及 Toro 嫩滑,但也是極為肥美的。

另外加了份手卷。油金魚 Hamachi 的餡料,爽口鮮甜,肉汁滿瀉。

甜品是隔壁同一集團的 Harlan's 做的綠茶 mousse cake,甚有水準,配合特製的香草 vanilla 醬更是叫人一試難忘;另可選擇咖啡。

整個 Set Lunch 有八件壽司、燉蛋(或烏冬)、蕎麥麪和甜品(或咖啡),合共 HK$180,在尖沙咀區有如此質素,可算是非常抵食。倘若晚間來到,食物價錢至少要貴三、四倍呢!

去上海工作一年多了,回來後最想吃的,便是食鐡板焼了。第一時間便想到灘萬找莫生。他的手藝一流令人回味,但老公說他現在去了尖沙咀新開的kaika。那裡有極美的外境哦!?那更加要去一試啦!速速訂枱指定向境那張。訂了6:30pm。是為了避開人潮多、工作忙影嚮質素。上到去剛好天未黑,九龍半島的遠境這時間看着天漸黑,萬家燈火不斷閃起,真是美得很。但問起才知道那天莫生過了銅鑼灣真的有點失望!!不過那男侍應介紹了一位師父給我們,說這師父很細心,有很多客人也指定找他,有時莫生不在或太忙不能分身時,都會交由康師父代煮的。好!就如此決定吧。我們三人先叫了,一個霜二人餐$1680(二人份刺身、鵝肝、兩帶子、一隻波士頓龍蝦、美國牛肉)。加了一隻日本大鮑魚$1600、日本鰻魚$400……先來二人餐的刺身,可以看出壽司師父的刀工一流……竟可以把一片正常厚度的生魚片再一開為二,切開當作兩片……但又比一般白身魚薄切的厚……是師父個人特色…刻意如此嗎??或是師父心事重重……心情欠佳嗎?……幸好我們不太好刺身……實在不敢恭維。我笑說着,引得康師父都一笑置之。見到他把一團白色物放在板上燒。請教下原來是日本准山磨蓉出來煎香再配

去上海工作一年多了,回來後最想吃的,便是食鐡板焼了。第一時間便想到灘萬找莫生。他的手藝一流令人回味,但老公說他現在去了尖沙咀新開的kaika。那裡有極美的外境哦!?那更加要去一試啦!速速訂枱指定向境那張。訂了6:30pm。是為了避開人潮多、工作忙影嚮質素。上到去剛好天未黑,九龍半島的遠境這時間看着天漸黑,萬家燈火不斷閃起,真是美得很。但問起才知道那天莫生過了銅鑼灣真的有點失望!!不過那男侍應介紹了一位師父給我們,說這師父很細心,有很多客人也指定找他,有時莫生不在或太忙不能分身時,都會交由康師父代煮的。好!就如此決定吧。我們三人先叫了,一個霜二人餐$1680(二人份刺身、鵝肝、兩帶子、一隻波士頓龍蝦、美國牛肉)。加了一隻日本大鮑魚$1600、日本鰻魚$400……先來二人餐的刺身,可以看出壽司師父的刀工一流……竟可以把一片正常厚度的生魚片再一開為二,切開當作兩片……但又比一般白身魚薄切的厚……是師父個人特色…刻意如此嗎??或是師父心事重重……心情欠佳嗎?……幸好我們不太好刺身……實在不敢恭維。我笑說着,引得康師父都一笑置之。見到他把一團白色物放在板上燒。請教下原來是日本准山磨蓉出來煎香再配與鹅肝,這個配搭很特別令人充滿期待,鵝肝亦厚度十足,下板一煎即時香氣四飄,一試皮脆內滑,見火侯、現功架而准山又是同樣皮香,肉軟軟的口感奇特。立即安歌再來一客。跟着到帶子煎香兩面再一開四放在已煮熱清酒汁上,上枱時才將邉柱肉浸在帶子汁,師父說這粒要先吃,啊!很爽脆,帶子肉剛好七成爽漱鮮甜。師父把生猛的鮑魚放鐡板上鮑魚即時擺動十分新鮮。師父以熟練的手法一义一圈再一刀便把鮑魚起了出來,他將邊位切粒、肉身厚切,兩種口感不同,師父的用心令我感動值得一讚。到龍蝦了師父很有心機慢慢將大蝦拑拆売,再用龍蝦膏做成醬汁味道香濃。可惜‘波蝦’肉質較硬、龍蝦味不足。相比澳龍或本地花龍是失色了。日本鰻魚夠香脆、牛肉亦夠肉味多汁選料上乘。康師父的炒飯是我全日最好之選,炒得乾身少油,蛋和飯粒粒分明,加了山椒籽炒過的白飯魚仔去提味實在太出色。真的心滿意足。不知是否太久沒吃鐵板燒所以覺得每樣都勁美味。最後真的要一讚康師父的細心,開始時他問及我們口味愛香濃或是清淡一點、有一份不下黑椒嗎?哦!原來他見到囝囝還小,怕小孩子丁點辡也受不了。我跟老公都沒注意到,炒飯前先拿定湯匙給囝囝。他真的很細心,甚有莫生的影子。簡單的一句話和一個動作,並不是每個師父會做,但已令人感到他對客人的熱誠有禮,令我窩心非常。而聽他說雖然已做了十五年鐵板燒,今次過來海賀這餐廳主要是想跟莫生學兿,提昇裝備自己。抱着活到老、學到老,而又不謙不卑如此敬業樂業的心態,我倆都甚為欣賞稱讚。為這餐廳加了不少分數,我認為厨師們是一間餐廳的重要財產和靈魂,一間餐廳的好與壞、成功與否,‘她們’的厨師出品是重要一環,當然還需要很多方面配合如環景、佈罝、氣紛和服務質素等。我個人覺得kaika若想更加成功、‘她們’的刺身侍應服務質素必需加以改善,刺身不能因只是跟餐的便馬虎了事,用料不合格,毫無誠意大大拖低整個餐的完美度及食客的心情。而樓面亦要主動觀察客人的需要,不能只靠師父幫忙招呼客人,換碟加茶都要客人、師父出聲才去做。盡善盡美才能得到食客的歡心及再臨。p.s因為以電話所拍的照片太差,所以沒有上載,待下次拍得好時再補上給各愛好者觀看!!
