《Men-ya New Old》醬油拉麵🍜📍中環歌賦街9號地舖時間一轉,對上次黎呢間店已經係有半年前了。上次食嘅係《昆布水沾麵🍜》,明顯地係高質,不過偏貴,而昆布水並冇為我帶來太多餘韻,所以一路都冇再去。今日咁啱响附近收工,又諗起佢,而一路都有個念頭想試埋佢嘅《醬油拉麵🍜》,一於就gogogo啦。香味 (3/5)名店嘅拉麵🍜,一攞上枱個賣相超靚,以為好香,點知一聞又只係一般般,唔係特別香,聞到只係少少醬油味同蔥味。湯 (3/5)湯非常咁通透,油量偏多不過都算輕盈。醬油香同味,我認為就唔特別,只屬於正常好食。而鹹度偏高,頭幾啖還好,食到未有d吃力。而湯底嘅味可能因為太鹹,唔係好食得出用咩去煲,估計係以雞骨為主。麵條 (4.5/5)細麵至中細麵之間,軟糯,幾有個性。以一個咁重鹹嘅湯來講,麥味就唔多食得出,少少啦,不過呢款麵口感係好特別,同屯門《道》款麵有相似之處。配料 (4/5)豬叉燒嘅煙燻味超高,而家有用火熗燒過先上碟。肉質較扎實,唔係軟熟嗰類口感,不過都唔硬。肉味係夠,幾好食。溏心蛋本身冇,要額外加。我就覺得麻麻地,太熟左少少。筍就唔錯啦,正正常常。整體 - 如果唔介意貴少少,可一試。我有一個強烈建議。關於攞盤方面,麵家可以將d蔥放一旁,唔好擋住 d 叉燒。一方面賣相會靚仔d,第二方面,好似我咁,乜都未食就聞左先,既然叉燒比左咁多心機整到咁香,叉燒味點都會優勝於青蔥味,第一印象會好好多。

I just had a rather disappointing Chicken broth Ramen the other day and I need something to fix that feeling😌…Isshin Group brand should be pretty safe right!? Zagin Soba and Maru De Sankaku are pretty decent🤔So this ramen place has been around for quite some time but I personally don’t really know what Kombu taste like and I’m not too bothering knowing, so, never had the interest but I heard that they also do pretty good Shoyu Ramen and I didn’t wanna go too far, so, I thought, why not give them a try…Their Shoyu is comparatively thinker than what I usually have and it’s also on the richer side and it has a very distinctive taste it has a very distinctive taste(tasted a bit like chicken stock) differentiate them from other Shoyu broth. Really love what they did with the Chashu, they blow torch the meat before they serve it and the slightly burnt meat scent kinda enhanced the flavour of the broth😋as for the ramen, it’s a little soft for my liking but I’m fine with it.Overall I reckon their quality is pretty high and I’m still yet to check out their Kombu tsukemen but I do they are pretty pricey.

位於中環歌賦街的「Meni ya Now Old」以簡約木系裝潢營造和風氛圍,主打鹽味及醬油味拉麵與沾麵。醬油拉麵湯底清澈但醬油味道非常濃郁,豚骨香氣渾厚,搭配幼麵吸附力十足;鹽味昆布水沾麵則以清澈昆布高湯為靈魂,冷麵蘸熱湯的吃法凸顯麵條彈牙口感,海潮鮮味層層綻放,熱湯內的豚肉都非常給力,油脂分布均勻,肉質鮮嫩,完全吸附熱湯的濃郁岩鹽味道,豐富味蕾。日式清心蛋溏心流淌,醬香入味,而拉麵份量都剛剛好。人均$140價位屬中上,但湯底工藝與食材品質值得再訪。服務效率卓越,新開張一段時間暫時不用排長龍,適合追求湯頭深度的拉麵迷,建議加點小食例如和牛壽司豐富用餐體驗。

今時今日香港,通貨膨脹、物價騰飛,食個拉麵閑閑地都過$100。其他嘢唔講,講重點:一定要食昆布水沾麵!但係唔好浸落個湯度!食完個麵先將昆布水倒落湯度飲湯!如果你唔遵守以上呢一個做法,你得到嘅係一個失望。實際上係食冷麵,飲熱湯,因為個麵已經沾咗昆布水。昆布水沾麵 - 好好食!

食物質素:相當驚喜有新意歌賦街本身就多出名高質素嘅日式拉麵鋪,包括蜆湯拉麵Ode、雞白湯拉麵座銀、米芝蓮推介沾麵周月、長滨Nagahama No.1拉麵等等,估唔到食咗咁多年全港咁多間拉麵鋪,歌賦街都仲可以開出一間咁有新意嘅拉麵鋪,主打昆布冷水沾麵、配滾熱辣嘅醬油味/鹽味湯、口感精彩豐富、冷熱交融,檯面上推介嘅“2億年鹽”味道不錯lol。呢間餐廳無論昆布水沾麵定係湯麵、無論醬油定鹽味湯底都幾好味,拉麵爽口彈牙有質地,配菜嘅肉煙燻味香濃、幾有趣。如果點昆布水沾麵,終會有冷熱交融嘅體驗、拉麵嘅爽口清爽程度會指數級飆升。環境:座位空間大,坐得都舒服,乾淨企理、有大包裝紙巾提供、衛生同服務都不錯服務:服務員好熱心,即使忙都會用心觀察你嘅需求,喺我睇緊檯面instructions嘅時候、會主動行過嚟同你講解推介食法、感受得到佢嘅關注同觀察。呢一d野喺中環lunch time高峰期期間係超出我預期嘅。觀察:餐廳有一個日本人資深拉麵大廚(有時唔喺度)同埋一個跟佢學師嘅後生日本人靚仔。我本身聽得明少少日文,佢地做野期間一直喺度用日文傾緊點樣將個拉麵整到更加完美爽口好食,對住顧客又特別禮貌、服務好好,感受得到佢地嘅專注力同職人精神,呢一點我都好欣賞。性價比:128蚊湯麵、138蚊昆布水沾麵,加盛合40蚊(包括2*2煙燻肉、幾塊筍、成隻溏心蛋),同其他中環高質素拉麵鋪嚟比算係中規中矩嘅價錢,有佢嘅競爭力,given歌賦街附近其它餐廳食肆更加貴、性價比更低、份量更小,佢已經都算相對更抵食。
