Finally came here to try this Michelin ⭐️⭐️ French restaurant. We had the Full Amber Experience 6-course lunch at $2118/person. Quite refreshing to have some chives paired with the herring roe.

It’s a signature dish for many years. Rich and having many layers of flavour, I especially love the smooth cauliflower puree. The flavour of each ingredient is identifiable and complemented with each other.
🥂Duck Foie Gras • Sugar Snap Pea • Pea Shoot • Pea Flower • Preserved Black Winter Truffle • Madeira • White Onion
I’m actually not a fan of peas but this one was made so well. The duck foie gras didn’t have a gamey taste and it’s very buttery and soft with a mild truffle taste. The onion chips helped ease the greasiness. Very well done indeed.

It’s my first time trying white asparagus. It was so soft with a milder flavour compared to the green ones. Such a creative combination to add the wasabi sauce that definitely enhanced their natural clean flavour.

Next comes this French veal bone marrow soup risotto. The texture of the scampi was just right, very bouncy and tender, went perfectly with the bone marrow that had a buttery and creamy texture. Love it!
🥂Lamb Rack • Celtuce • Romaine Lettuce • Extra Virgin Olive Oil • Copper Leaf • Gastrique Bearnaise
The main was good but not wow enough. This lamb rack was perfectly cooked to medium but there was too much sauce.
🥂Gianduja • Arabica Coffee • Buckwheat • Sudachi
A beautiful chocolate lava dessert with crispy notes from the buckwheat on the side. Not very surprising but we still enjoyed this.
🥂Ying-Yang drink
The staff came to our table and made us a Ying Yang drink to pair with the Petit four. It’s basically a mix of earl grey tea and coffee. The rose powder gave a nice aroma.

Last but not least, some petit four and tea came to end the meal. Madeleine of the day was an interesting lemon and peppercorn flavour, though very mild. They also gave us some pieces of chocolates to take home.
This 2 stars Michelin high-end fine dining lives up to its fame. Everything was in nice presentation and was as flavourful as expected.
