Dinner in one of the 3 private rooms. Someone didn’t like the rectangular table setup but we didn’t have enough ppl to fit the room with the round table (which was for 16-18 ppl).Here’s what we had. Trio of Appetizers:—Japanese Hokkigai-char siu made with Iberico Pork Fillet, glazed with French Longan Honey. Impressively made; with evenly distributed lean and fatty portions.-Sauteed Scallop (barely cooked to preserve the crunchy texture), topped with dried shallots on a bed of Sea Urchin sauce.S
Here’s what we had.
Trio of Appetizers:
—Japanese Hokkigai

Soup: 蟲草花石斛燉螺頭 kept warm by a candle. Very wholesome ingredients.

Tiger Prawns in their shells braised with Green Pepper, which made them more 麻 than spicy. Crunchy flavorful exterior with fresh tender flesh.

Deep fried dry-aged 馬友 Fillet, served with a Brown Sauce splattered in a purported artistic manner. They didn’t like it, saying it was too dry; I begged to differ- exterior was crispy and full of umami as a result of the dry-aging.
US Short Rib slow-cooked for 24 hours, then charcoal grilled. Served with Gravy; but I thought the salt was just fine.
豆苗 served in Thick Broth.
Deep-Fried 三黃雞. Loved the Spring Onion Sauce that came with it; chicken was perfectly cooked: skin was crispy, flesh was tender.

越光米 Stewed with Matsutake and Morel mushrooms, mixed with white truffle oil and a bit of Uni. Table favorite: remarkable with a myriad of flavors.

20-day-old pigeon smoked with coffee. Some found the exterior not crispy enough.
Dessert trio to finish off our meal:
-massive portion of Earl Grey Panna Cotta,
-Black Sesame pudding in the shape of the bank lion
-assorted biscuits and crumbs.
In summary: some delightful dishes. Despite the efforts of our main server, the team lacked communication and coordination: the dessert actually came before the pigeon (which was added as an afterthought). Those who were busy being intoxicated had already finished their dessert so couldn’t be bothered to try the pigeon.
