The soup was simmered for 8 hours to get the savory, umami-rich flavor.  The fish maw and Hokkaido Kegani were just luscious and irresistibly delicious.

The teppanyaki mantis shrimp accompanied by the matsutake mushroom with Ankimo sauce was a perfect pairing, each aspect has complexly arranged and well executed to form a beautiful balance of flavors.
