Bread freshly baked and moist inside.Amuse bouche appetiser is savoury with soft and crunchy texture contrast. Duck foie gras - paired with japanese mushroom. Wonder if a stronger flavoured mushroom would be better but then the focus is on the foie gras. Two different sauces are excellent. Fig is great.
Patagonian toothfish - had to look up what a tooth fish is haha! not exactly a nice looking fish but it sure tastes damn good. Soft, tender cod-like but of course it is belongs to the cod family! Yuze wasabi sauce is amazing, carrot is sweet and tender. There is also slices of crunchy purple carrot to add texture.
Choose between wagyu or pigeon for the 6 course meal.
The pigeon is excellent, not gamey in taste, perfectly cooked to retain the tenderness.
The wagyu pales in comparison to the pigeon as somehow the flavour of the fat did not come out. Maybe need a hotter sear???
Passion frust souffles - wow! must have been one of the best souffles I have tasted. Passion fruit citrus flavour is excellent combination! Sorbet with citrus favours just synch with the passion fruit souffles.
Fortunate enough to have the chef served us the petit fours. Though it was a fleeting close encouter!
Certainly highly recommend this place. Pay good attention to the sauces, the contrast in texture and aesthetically crafted plating to enjoy all the details of fine dining.
PS: for those who are celebrating their birthday, the petit fours will be served on a small musical chair gadget with happy birthday tune, certainly icing on the cake.
