Amber Discovery Menu is available if you arrive at an earlier time. You get to try 4 courses and a complimentary glass of champagne with their Amber Infinity Cake.The Amuse Bouche was off to a great start. The mushroom tart had a nice earthy flavor to it but the truffle panna cotta definitely wowed us more.The hot Sourdough bread was definitely nice. For the first course, the yellow tail was a refreshing choice but the foie gras definitely was our favorite. The foie gras itself was good of course but the sides(red onions, shiso etc) complemented the foie gras to a great dish.
For the second course, the scallops and the elevated daikon wakame paled slightly to their Lobster. It was springy and the tartness of the mikan and sweetness of puree made the lobster a delightful treat.
For the mains, we liked the chicken more but the fish was had an interesting twist. The aroma from the truffle was appetizing with overpowering the other flavors of the mushrooms or sauce. The chicken was tender and juicy.
The skin of the fish was nice and crispy and the twist I felt was the oyster leaf on top giving the fish a stronger seafood flavor.
For desserts, I preferred the pumpkin/coconut dessert while my friend preferred the chocolate one.
There were so many components of different chocolate in this dish, allowing you to try them all at once.
I preferred the coconut/pumpkin dessert as the flavors remind me of summer and fall. Also trying the components separately and together provides you with different sensations.
Coffee was included in this menu and I chose decaf. However, there is more.
They have some not so common fruits and also Madeleine/chocolate with their home made wine.
Last was their Amber Infinity cake, which was inspired by their chandelier.
