星期四晚放工有點遲,和男友差不多8點半才到銅鑼灣,去登籠街找拉麵吃,選揀這店是因為人不多,而且OpenRice 的評價都不錯,所以一試。我倆入到店內被安排坐在Bar枱,不久就有一行六人外國年輕人坐在我們背後,他們太興高采烈地聊天,其實有點嘈,不過我們還是靜靜的點餐,女服務員給了水後,非常貼心問我們要不要轉位置,到一個比較清靜的角落,我立即說好,她亦報以微笑,感覺十分親切。 我點了辛子黑蒜拉麵 ,普通硬度。黑蒜湯底加上十分輕微的辣,十分惹味;叉燒薄切,半肥半瘦;麵質還可以,但我發現我喜歡粗一點的拉麵,不過男友指福岡拉麵是這樣的。 男友點了鹿兒島黑豚拉麵,硬麵質。湯底十分濃厚,麵質跟我點的的確有分別,還不錯。 離開後,回想這晚餐,我感到最窩心的是服務員能察覺客人的需求,而且主動提出改善的方案。不知怎樣,好像很久沒有感受這份用心,所以決定給一個好評,有時食物質素固然重要,但服務質素亦是不可小看的軟件,能足以決定客人是否會再回來。

我倆入到店內被安排坐在Bar枱,不久就有一行六人外國年輕人坐在我們背後,他們太興高采烈地聊天,其實有點嘈,不過我們還是靜靜的點餐,女服務員給了水後,非常貼心問我們要不要轉位置,到一個比較清靜的角落,我立即說好,她亦報以微笑,感覺十分親切。


我點了辛子黑蒜拉麵 ,普通硬度。黑蒜湯底加上十分輕微的辣,十分惹味;叉燒薄切,半肥半瘦;麵質還可以,但我發現我喜歡粗一點的拉麵,不過男友指福岡拉麵是這樣的。


男友點了鹿兒島黑豚拉麵,硬麵質。湯底十分濃厚,麵質跟我點的的確有分別,還不錯。


離開後,回想這晚餐,我感到最窩心的是服務員能察覺客人的需求,而且主動提出改善的方案。不知怎樣,好像很久沒有感受這份用心,所以決定給一個好評,有時食物質素固然重要,但服務質素亦是不可小看的軟件,能足以決定客人是否會再回來。

星期五晚要在人多的銅鑼灣揾食實在多人。由於友人鐘意吃拉麵,我就建議去登龍街「踫踫運氣」,之所以說踫運氣,是因為好運的話就不用排隊😉 。由於整條登龍街都開滿了麵食店:日式拉麵、山西手削麵、車仔麵、甚至是譚仔,全部都無得訂位,但選擇甚多。見到這間的人龍不算十分長,而此店在日本又曾獲獎,便排一排。我點了的雞白湯豚骨拉麵,湯底濃濃的,不過不失,麵質彈牙,也不差。我和友人均喜歡食䓤,於是我們兩個都加了䓤,加錢的䓤比我們想像中大碗,結果食剩了,浪費了食物,真不好意思。發生小事一則:在排隊的時候,我們前面的三個人不滿等得太久。因為店員讓了我們以及另外張二人枱先就座,令他們三人等了很久,雖然我是「受惠者」,但也替他們不值,覺得他們應該改善座位安排的手法。

They have a lot of choices on their menu and i've almost tried out most of the ramen selections. They are all reasonably priced and they can always maintain the quality of the soup base right in the entire day.Highly recommended and it's one of my fav shop in causeway bay. The only thing they need to improve is the staff should be more active and bring themselves to the customers promptly and not hanging around when the shop is not busy. and they should provide dining tissues to those who doesn'

Highly recommended and it's one of my fav shop in causeway bay.


The only thing they need to improve is the staff should be more active and bring themselves to the customers promptly and not hanging around when the shop is not busy. and they should provide dining tissues to those who doesn't seat next ether bar where the tissue box isn't available.

登龍街已經慢慢變成銅鑼灣的美食街,有著各式各樣大小規模的食店餐廳。晚飯時候未到,下午獨自先出動逛吃逛吃一番~對街頭的一間Lobster roll小店有興趣,後來善變的女人又想食熱嘢,環視之下,選了金田家。甫入店,店員同問道:幾位?我回道:一位。我可以坐bar枱嗎?店員點頭並友善帶領至bar枱。由於一個人用膳,暫不需要與人socialize,可以讓我抬頭看看廚房的情況﹑拉麵師傅製作時的神態,甚至玩玩手機也毫無顧慮。雞白湯豚骨拉麵Chicken Tonkotsu Ramen豚骨雞白湯ラーメン按照我一貫的喜好,點選了「硬」的拉麵,出品也滿意,有嚼感。叉燒沒有特別的驚喜,不過也不失。沒有溏心蛋的拉麵像缺少了什麼似的。食拉麵的同時,按日本飲食文化,是應該喝冰水以緩和濃厚的味道,亦有助於口腔的降溫。晚上有約,所以不撐滿肚子了,「替玉」也可免了。

按照我一貫的喜好,點選了「硬」的拉麵,出品也滿意,有嚼感。
叉燒沒有特別的驚喜,不過也不失。沒有溏心蛋的拉麵像缺少了什麼似的。
食拉麵的同時,按日本飲食文化,是應該喝冰水以緩和濃厚的味道,亦有助於口腔的降溫。
晚上有約,所以不撐滿肚子了,「替玉」也可免了。

Surprised at how the street that used to be filled with people queueing for the Stanley Minibus and local Chinese seafood restaurant where tables have been put onto the road has transformed into a Ramen Street; there are 4-5 Ramen restaurants right next to each other!

Ingredients
It has always been my gripe that the Ramen in Hong Kong is lackluster compared to its incarnation in Japan.  The techniques are the same, the cooking methods are probably the same but the difference lies in two areas.  The ingredients and the small things.
I am by no means a ramen connoisseur I just try to understand what I like, why I like and why I don't like.  Fundamentally to me, ramen is about the soup broth, followed by the texture of the noodles, the charsiu and the condiments are secondary.  Whenever I eat a new bowl of ramen I drink the soup first.  
We ordered two bowls of ramen, Original Tonkotsu Ramen and Chicken-Tonkotsu Ramen.  The first taste of the soup broth confirmed to me that this soup broth was good.  I don't know where they source their pork bones for the broth but could instantly tell it was a grade superior to that used by other vendors.  There is a subtle sweetness to the broth that resonates from fresh ingredients and through that hint of aroma compounds the taste buds into a dancing circle.
The Small Things
Now what I mean by small things are the little details you find they put extra effort into but with that effort there is meaning to its existence.  
There were three things I noticed that showed attention and dedication to making the bowl of noodles

Icy Cold Drinking Water
The water they serve you here is ice cold.  In Japan it's almost a given that the water is at icy cold temperature.  However contrast this practice to Hong Kong, they usually serve water at 'somewhat cold' or have variations such as putting charcoal water.
In practice you're eating a bowl of ramen why does it matter what the water is like and therein lies the difference.  What I believe the reason for serving the ice cold water is to clean your palate after drinking a thick broth.  In doing so, you refresh your taste buds, numb your tongue at the cold temperature.
After you have reset your palate you cane experience the first taste of the soup broth again and again.

Thicker Noodles with Chicken-Tonkotsu Ramen

The Chicken-Tonkotsu Ramen stated that it used a different thicker type noodles, understanding this from a economic and business perspective, it doesn't make much sense to source a separate type of noodles just for another type of Ramen.  So in understnading the texture and taste, the thicker noodles taste better with the clearer Chicken-Tonkotsu broth.
In viewing things from an empathetic perspective they absolutely have no reason to do that.

Charsiu
The next thing is the charsiu, in my perspective and I believe many people will disagree, charsiu isn't really important in Ramen.  To me it is secondary to the soup and the noodles.  A good bowl of ramen is able to create a balance and harmony of flavours through simplicity and harmony of flavours.  What most restaurants in Hong Kong seem to do is the put as many things in it as possible - bean sprouts, woodear mushrooms, corn, charsiu, egg...
It's a commercial decision to make people like to feel they are getting value for money.

Anyway cut long story short, the ingredients in the bowl are simple but do not over take the flavour of the other elements.  The charsiu has been lightly marinated to add a touch of soy and sweetness to the taste.

It was a quick eat, but very enjoyable and surprisingly good.

Also a word of advice, don't order the extra spring onions, it's alot.

天氣凍,自然想食番碗暖粒粒嘅拉麵,平時收工好夜,所以通常都係食一蘭比較多難得收早,就去試下新野結果就揀左間人龍比較小人既,等左大概5分鐘,由於我個人比較重肉 ,所揀左個有4塊豚肉既鹿兒島黑豚拉麵,湯底比較清淡,但就好似cappuccino咁有層泡,個人就麻麻地呢個質感溏心蛋就唔錯另外叫左個餃子($30四隻),正正常常同埋薯餅 ($35),男朋友話覺得炸粉有d厚總括黎講,冇乜特別~~~~~~~~~~~~

趁早放工未多人就試一下金田家的拉麵,睇到評語不錯就試下。拉麵共有六款選擇,我試了最經典拉麵,上菜先發現原來沒有溏心蛋,有點失望,但又唔想加錢所以算了吧。面軟硬度我選了普通,但比起一蘭/拉麵來都相對較硬,好似我食得慢既人,食到尾麵就會軟身D。叉燒切片薄、肥瘦適中、肉質幼嫩,之前食過大部分拉麵既叉燒都會好乾好鞋,呢間既叉燒真係稱得上美味,唔似湯渣,而且湯底味道比較淡唔油膩,飲得多都唔覺飽濟,但湯底的豬骨味相對少。總括而言,幼拉麵、湯底清、叉燒嫩,值得一試!

面軟硬度我選了普通,但比起一蘭/拉麵來都相對較硬,好似我食得慢既人,食到尾麵就會軟身D。叉燒切片薄、肥瘦適中、肉質幼嫩,之前食過大部分拉麵既叉燒都會好乾好鞋,呢間既叉燒真係稱得上美味,唔似湯渣,而且湯底味道比較淡唔油膩,飲得多都唔覺飽濟,但湯底的豬骨味相對少。

總括而言,幼拉麵、湯底清、叉燒嫩,值得一試!

Ramen craving was hitting again and want to go to shops that I havn't been for a while. After reading that Kada-san obtained #1 ramen in Fukuoka and #13 in the whole japan during the Japan Ramen award 2016, it makes me want to give it a go again. The chasiu tonkatsu ramen with outflowing chasiu looks good. As usual, I will taste the broth first. It is a very intense, compact and thick broth. However the white bubbles on top of the soup isn't appealing at all. I still remember when I go shabu sha

The chasiu tonkatsu ramen with outflowing chasiu looks good. As usual, I will taste the broth first. It is a very intense, compact and thick broth. However the white bubbles on top of the soup isn't appealing at all. I still remember when I go shabu shabu in japan, they call this aku (あく) , which is something bad. Some might say it is the essence but most people will scoop it off. The cha siu is actually quite dry, lean and slightly on the chewy side despite that it is a thin cut. For the noodles texture, I choose the very hard and seems to match my desire. Thick soup and super hard noodles texture is the new trend for me at the moment. Black fungus and spring onions are essential and I would say it is a very standard ramen. 
I also ordered a seared cha siu for $25. The oil that comes out after the searing has a unique taste, adding both texture, aroma and palette experience. Super thin cut of the chasiu but not very tender. It is actually not bad for the price

同老婆本來去一蘭既~~但等左一輪,人龍無郁過,之前行過登龍街,拉麵店咁多,把心一橫就試一試。揀左呢間,老婆揀左經典拉麵,我就揀左辛子黑蒜拉麵。打卡兼影相share上facebook 或者instagram就送隻溏心蛋。食完,老婆話湯底似一蘭,我個辛子就唔辣,但黑蒜味好重,飲一口湯既感覺⋯⋯我會形容係個黑蒜味好「硬淨」,好實在既感覺,唔知大家又明唔明呢?麵條幼身,但算係彈牙!叉燒係薄片,無咩肥肉,我本身鐘意食啲肉肉地既⋯⋯叉燒既野,真係好個人,呢度既就都ok既~~總括黎講,真係中規中矩,無驚喜,亦無失望。
