I always spotted a long queue for Tian Tian in New Town Plaza. I arrived before 7pm on a weekday night so I grabbed the chance to give it a try. I ordered most dishes from the signature options listed on the magazine-like menu. While all dishes are well above average at its price, this review focuses on the Wenchang Chicken which earned widespread recognition. A quick conclusion is that it is one of the best Hainanese chicken (rice) that I have ever tasted.

Detailed review:
Tian Tian’s chicken rice is the product of innovation in which the owner, a Hainanese descent, constantly strives to improve the foundation recipe. The combination of piping hot rice and perfectly tender cool poached chicken eaten with spicy chilli sauce, dark soy sauce and minced ginger makes every mouthful a mélange of flavours and textures. Therein lies the charm of Hainanese chicken rice.

Both the rice and the chicken amaze me. Tian Tian sustains the practice to serve piping hot rice and cool poached chicken, which I highly appreciate.

The rice reflects one’s culinary prowess. Apart from knowing the proportion for the seasoning ingredients, one also has to stir the rice diligently throughout the cooking process. The rice in Tian Tian fully absorbs the flavours of the chicken stock and each grain is cooked to toothsome perfection.
For the chicken, shared by the owner, the blanched chicken is soaked in an ice bath in order to lock in the natural juices and achieve optimal texture. Tian Tian boils their house-made dressing from a secret recipe and drizzles it over the poached chicken to lift its flavor as well as to bring depth to the entire dish. I guess the dressing is a mixture of soy sauce, oyster sauce and something else.

How meticulous! Right, patient work always gives a fine result. I definitely recommend you to savour the chicken rice in Tian Tian for its fragrance and delicious flavours.
