店員好詳細咁介紹 呢份蝦係嚟自處女群島嘅😯當時即刻好好奇就search咗 原來係位於加勒比海附近

蝦肉好新鮮😌整到三成熟嘅狀態 而且海水味極重 嗰種鹹鮮味配搭本身蝦味嘅濃郁 配搭埋下面用咗watercress來整成嘅醬汁 (未到帶點酸甜 有少少似青醬味)我完全係成餐飯其中一度最深刻嘅位🥳

呢一款係意大利雲吞配清雞湯 亦係餐牌唯一一度熱食嘅頭盤 擺盤非常中色feel 三粒雲吞配搭下面嘅湯底 遠睇似鮑魚近睇似角仔😂但係味道方面係好食嘅 但係對比前面兩道菜較為平淡🤔
個湯底好香 清純而龍口清雞湯味道帶點好似藥膳湯底咁帶少少甘苦味 🤪
但係雲吞皮口感煙靭 入邊啲餡了就比較普普通通 整體嚟講都可以一試嘅

✨Main

🦞Boston Lobster (+$80)
我嗰份係最期待嘅波士頓龍蝦 一上枱已經有驚喜龍蝦雖然比較細隻但係色澤賣相非常鮮艷睇得出好新鮮 入口時龍蝦味都幾突出 非常鮮甜嫩口 肉質都幾彈牙 應該係成餐飯最開心嘅一道菜🥰
而且旁邊仲要配埋個意大利青瓜味道清爽 中和返主菜嘅咸香 而且喺中間部份釀入咗一啲龍蝦肉造成咗個類似蝦滑狀態 外面就炸脆咗 整體口感非常豐富👍🏻

🐷Pork Belly
而女朋友份main就揀咗個西班牙豬🇪🇸呢份嘢超級香 肉質非常厚身 大大嚿煎香咗 雖然佢係用咗豬腩肉嘅部份 但係一d肥膩嘅感覺都冇 肉質一絲絲非常柔軟 外皮就非常香脆😋
醬汁方面就用咗橙 雪莉酒配搭返成道菜 呢個係幾用心嘅配搭 用一d酸甜醬汁配搭濃味鹹香 食完都唔覺得飽濟~

✨Dessert

🍧Lychee
個荔枝甜品面頭用咗荔枝打成嘅泡沫 中間有一啲紅桑子醬 然後就有一層雪葩 最底嗰層就係烏龍茶啫喱 一匙羹𢳂到底食可以晒咁多種口感
不過最想讚就係面頭嗰啲荔枝泡泡 食到好香嘅荔枝味之餘又好似一陣風咁冇咗😂幾特別嘅口感

🍑Peach Melba
呢款比較適合夏天嘅一款甜品 比較圓嗰粒係用咗類似糯米糍質感嘅蜜桃雪糕 旁邊仲有幾塊蜜桃 非常鮮甜😊
但另一邊就做咗一個杏仁雪糕小弟就唔係太識欣賞 味道有d奇怪 並唔係平時食開嘅杏仁味🥲

🌝女友評價:

首先環境唔洗講啦 五星級酒店水準 無論係大堂定餐廳入面都勁有古典風格吊燈餐椅同埋擺設都有種英倫宮廷風🙈打卡一流
另外對住維港食嘢都係十分之正 雖然我哋個日都有落雨 但間唔中放晴 都好彩可以影到靚靚合照✨

而且可能因為我早左成兩個月book 所以有得坐對正海嘅窗邊😍真係bonus 對住維港食住龍蝦嘅男朋友好滿足~
而嗰日我哋食嘅lunch menu都轉左盛夏當造嘅食材 有蝦有龍蝦有吞拿魚 甜品都有荔枝😆
再加上唔同配料同fusion嘅配搭 非常新穎同切合我地兩個嘅口味☺️
職員都好細心介紹每一道菜 上嘅速度都啱啱好 食得滿足又舒服😌送上嘅生日蛋糕一啲都唔hea 成個信封咁印左餐廳名 慶生黎講真係無得輸😉

無論從menu 食物味道service 再到環境 都對得住米芝蓮一星😚我會話除左個杏仁雪糕 我會俾一百分💯佢轉季節menu我應該都會再encore下!

總括而言 以依個價錢食到米芝蓮一星嘅法國菜再加咁靚景 可以話性價比極高🙈✨

It is always enjoyable to eat at Petrus. We decided to go for the signature dinner menu which did not disappoint !To fit the summer theme, the appetizers were so colorful and gorgeous! Both the Tasmania river trout and Japanese firefly squid looked so pretty on the plates - they looked like paintings!The best is the Spanish red prawn! The Brandt beef calotte was OK but I was already full.

Dessert was soufflé with ice-cream which could not go wrong.

Overall, good food and good service . Will definitely come back !

一如既往是我其中一間最喜歡的餐廳不過現在訂位好像比以前更加難了如果大家是生日或者特別日子真的要提早兩個月以上預訂比較好還是喜歡這邊的環境可以到處拍照歐陸式的建築有一點城堡的感覺每一個角落都有別具的風格簡單一點點了一支section🥂94炎炎夏日還是配上白酒比較好多年來都是喜歡這邊的麵包頭盤不過建議不要吃得太飽煙燻沙甸魚的效果很好看不過這天的晚餐我比較喜愛「可以吃的蠟燭🕯️」其實是油膏來製成的蠟燭可以當是醬汁這個真的非常特別又有創意其他食材都非常優質喜歡餐廳安排的生日蛋糕這邊真的環境和食物都很值得推薦

重口味的肚腩當然係揀左有鵝肝同埋Mushroom foam的Puy Green Lentil 湯啦😽,呢個係難忘,有小小份子料理感覺,個湯打曬泡咁樣,賣相一般,但係整爛左隻蛋之後🥚再加好濃郁的蘑菇,鵝肝的味係充盈住你口腔每一個角落😋

龍蝦據聞都係Petrus 的招牌🦞肚腩認同係令人滿意,佢嘅檸檬百里香雞湯甜甜酸酸,係非常夾隻龍蝦的,龍蝦肉都好彈牙,加埋洋薑,成件事幾清新,不過可能因為蛋同龍蝦都係重泡,所以肚腩覺得食到成口泡咁😮‍💨

Coffee Crème Brulee
肚腩係完全冇期待過個甜品🍮但係係被驚艷了✌🏼超好食😍勁多層次的口感,底層係金寶,中間係濃郁的moose,仲夾住少少脆脆的granite,最上邊係一塊餅乾加一舊cream🧈焦糖的味道同咖啡混合得超好🍫

First time coming to such a fancy place for lunch. Arrived early so had some time to chill at the lobby first. When i first stepped into the restaurant, i was already awed by the interiors. Luckily, we were given a side room which gave us even more privacy. The view was great, would've been nicer if the weather was a tad bit more sunny. Food was impeccable, service was great, they even gave me a complementary birthday cake!

首次踏足 Petrus 時為 2015 年,晚餐中聽前輩們細說餐廳往事:九十年代還可抽雪茄的日子,某天見到剛成為大狀的男演員中午時份與友人在外廳抽雪茄,寫意非常。他們又說那時請客常到 Petrus,這個 class 的餐廳是有 host menu 和 guest menu 的,後者沒有價錢,客人不會怕不好意思而不叫貴價菜式,果真黃金歲月。一五年小妹在此初嚐 Cheval Blanc ,驚豔右岸 St. Emilion 美酒光彩優雅。一別六年多,桃花依舊的是, Petrus 依然華貴。朋友為小妹開了一支 Cheval Blanc (未免太破費了)。要知 2004 已是沈睡美人,要時間甦醒,Sommelier 給我們預備了一個闊底的 decanter。人面全非當然是菜式的氣質。2015 年的 Petrus,烹調細膩精緻,謹慎得體。2022 年味道大膽,鋒芒外露。當年是一幅 Gainsborough 的田園畫,今天儼然晚期的 Turner,調味如油彩大筆蘸上,看似混亂濃烈的色彩層次分明。 Chef Romain Dupeyre 就是那位 J. Amuse-bouche —— truffle and mimolette croquette ,size 略嫌過大,餡料很熱,一口咬下,不慎舌頭會被燙到,最好還是用刀叉進食。Mimolette cheese 味美,唯太「搶鏡」,吃不到松露之味。

Purple artichoke ravioli 初春雅枝竹暢泳極濃的 chicken jus 中。入口如雞精的 jus 令我狐疑這道菜是否失敗之作之際,味蕾上的烏雲漸散,雞湯之甘味才如酒後留香的 finish 般徐徐出現。慢慢細嚐,方能理解 chef 的妙思。

主菜 French lamb shoulder 是文明古國的爭鋒。 Caponata 本來已經 eclectic —— 西西里菜受過亞拉伯人的影響。這個 eggplant caponata 似乎加了 masala spice (?),氛圍拉至印度了。 Ras el hanout 包裹著的羊肩則是徹頭徹尾之中東、北非美饌。雖稍微太鹹,但奇蹟地層次分明。Bold,tangy,sweet,robust,形容詞都不可盡言閃耀之香辛和甜美融和。Lamb shoulder 味道隆重沒有對紅酒構成壓力。畢竟 Cheval Blanc 是 cab franc 為主,那位「大家閨秀」,配芳香食物,游刃有餘。

要講一下 petit fours 的 madeleines。我說過 Bâtard 的 madeleines 太 powdery,一放入口就 crumble down。而最好的 madeleines ,鬆軟而不鬆脆,嚼下去還有點彈力,然後油潤的糕點慢慢地溶散舌頭之上,我認為 Petrus 的 madeleines 做到了。加上陣陣蛋香,不能不讚。

久違了的 Petrus ,率性而巧妙的調味,不失優雅的菜式,法國面貌,多彩的本質,令小妹驚訝不已。雖然覺得調味較重,但整個午餐徐緩美麗,時光荏苒,到了主菜時,Cheval Blanc 也甜美得像果醬花蜜,到這裡來豈只享受食物,還有跟朋友共聚的上質時光呢。
