The congee soup base is different from the usual congee base hotpot outside. Being the reputed congee shop it is, the congee base is thick, and has elevated the taste so much. Because it is specialized in making awesome congee, the congee hotpot here is just so much better than the other hotpot shop that offers congee hotpot occasionally. There are no visible grains of rice. The glutinous rice base might stick to the bottom of the pot and burn, but it didn’t happen the night, either we were stirring diligently, or this place has some magical power.
We cooked the food by the proper order—first fish, then chicken, followed by beef and meat balls, adding flavors from mild to strong to the broth.
Cooking food in congee is believed to be healthier, just imagine your food being slow cooked surrounded by the warm congee, absorbing the essence of a really good broth. The meat texture is tender, and the fish is so sweet. All the ingredients here are freshly prepped, and honestly, I can drink all the congee soup after we finish the hotpot… it tasted so good!!
