Shangu cows are castrated when they are about 1 year old. The fat content of castrated cows is evenly distributed in different parts, giving the meat a fine marbled texture. Homemade Dumplings - surprisingly big portion. 5 huge pieces of nicely wrapped dumplings with minced pork, shrimp, crunchy black fungus and fragrant dried mushrooms. Various options of noodles were also available.
