Tucked away in the not so busy end of Middle Road, their TST ramen restaurant is located on the ground floor of H Zentre. It was an early evening on a weekday and I was shown to sit by the window which was great. On top of the menu was a leaflet on their seasonal special - Oyster Ramen but I already had my eye set on their signature dish - Shoyu Hamaguri soup ramen. I ordered the Shoyu Hamaguri soup ramen and a Japanese soy egg ($128+$15).

The ramen came in a big bowl and served piping hot. I warmed my hands on the bowl and the fragrant of the truffle oil coming from the broth was incredible
. The broth (made from clams, pork and fish) - a marriage of seafood and meat had a distinct freshness and was simply sublime, unique and refined. I had a sip of the broth with the truffle oil- and it was just luxury. Then I had a sip of the broth with porcini flakes and oil, and it pared so well with the broth. The slow cooked cha siu and belly pork just melted in the mouth
. The choice of noodles, which was different from the normal ramen you find in other ramen shop, was a wise choice as they were delicate and paired well with the broth and without turning soggy. A truly refined ramen! The soy egg which I ordered as a side had a jam-like centre once broke open, and it was soft with a hint of soy - delicious.

Overall: their signature ramen is just a delight to the palate and moreish! No wonder they managed to achieve one Michelin star in Japan four years in a row.
