Tucked away in the not so busy end of Middle Road, their TST ramen restaurant is located on the ground floor of H Zentre. It was an early evening on a weekday and I was shown to sit by the window which was great. On top of the menu was a leaflet on their seasonal special - Oyster Ramen but I already had my eye set on their signature dish - Shoyu Hamaguri soup ramen. There was also a short introduction in the menu by the founder and chef himself of his struggle and quest for creating a unique tas

There was also a short introduction in the menu by the founder and chef himself of his struggle and quest for creating a unique taste for Japanese ramen.
I ordered the Shoyu Hamaguri soup ramen and a Japanese soy egg ($128+$15).

Overall: their signature ramen is just a delight to the palate and moreish! No wonder they managed to achieve one Michelin star in Japan four years in a row.
