Gotta thank chef Mark for feeding us 14 pieces of sushi ($498) within 45 mins. Here’s what we had.

Chef began prepping prawns, grilling the蝦膏 over his charcoal grill. And presented us with 牡丹蝦 topped with 蝦膏 and drops of prawn oil. Not normally a fan of prawns, but loved this one.

Noodles. Perfect portion.
Yuzu sorbet.
In summary: excellent value; given the quality of the fish. Chef might be a bit heavy handed with the wasabi for my liking tho.
