Revisiting Gassan for dinner and we opted for the Shio Omakase at $1988/person. The experience was pleasant and we enjoyed every dish from the bottom of our heart. Can’t wait to come again in the near future. .🥂Sea Urchin CocktailDecorated like a cocktail drink, on top of the lotus leaf was the Hokkaido octopus with a little bit of lime flavour. 🥂Sea Urchin Cocktail
Decorated like a cocktail drink, on top of the lotus leaf was the Hokkaido octopus with a little bit of lime flavour. After taking out the lotus leaf you will find Bafun sea urchin, cherry tomatoes, noodles and the jelly-like 尊菜 in it. I was afraid the taste of sea urchin will be overpowered by the soup but it remained sweet and fresh. Such a special welcome ‘drink’.
Sashimi:
🥂White Geoduck白象拔蚌 (right)
Very sweet in taste already so just a little bit of bamboo salt would be enough to enhance its flavour.
🥂Righteye Flounder鮫鰈魚(left)
Soft and fresh in taste, you may add a little bit perilla to it and that gave a mild scallion flavour.
🥂Righteye Flounder Fin鮫鰈魚邊 (middle)
Added some soy sauce and wasabi, it was very fatty and melt in your mouth.
🥂Smoked Bonito鰹魚
We had this before and again it didn’t disappoint. Especially loved the fired onions on the side and the yellow mustard seeds on top that gave a little crunch to it.
🥂Hokkaido Oyster
Oyster hid inside a jelly which added plum wine, perilla and potato noodles. The oyster itself was fresh and gave a lovely briny taste. Very innovative combination and very flavourful.
Sushi:
🥂Kue 九繪
Seasoned with salt and lime juice, it’s very refreshing in taste.

🥂Ishidai 石垣鯛
Aged for three days, it’s sweet and very creamy and tasted like Botan shrimp.

🥂Kinmedai 地金目鯛
Unlike the Kinmedai I had before, this was very fatty. The skin was lightly torched, nice with the yuzu skin on top.

🥂Hokkigai 活北寄貝
Very sweet in taste and it was torched to make it more aromatic.

🥂Chutoro 中拖羅
My favourite nigiri of the day. Mild yet slightly fatty flavours burst in your mouth.

🥂Otoro 大拖羅
It was torched to elevate the flavours. Again, I can’t resist the high fat content.

🥂Shima Aji 深海池魚
Another fatty piece that is very rich in fish oil.
🥂Ranou Egg with Buri in Sesame Sauce 赤蛋鰤魚中腩
The buri and the ranou egg complemented each other very well in a flavourful sesame sauce.
🥂Erzu Abalone 蝦夷鮑魚
The abalone was first cooked in a pot with sardine and kumbu for hours, it’s then sliced and served with egg yolk Japanese pepper sauce.
🥂Akami 赤身醬油漬
It’s slightly firm in texture, seasoned with marinated soy sauce.

🥂Hokkigai 北寄貝邊
It was first grilled in front of us and then added some salt to elevate flavours. It’s very bouncy and sweet in taste.
🥂Mackerel 鯖魚棒
Wrapped in a crispy seaweed to balance off the fatty notes from the mackerel. It was a party in the mouth.
🥂Bafun Sea Urchin
Now comes my all time favourite. Simply looking at the generous amount of sea urchin on top is satisfying.

Filled with generous amount of crab meat, the taste was rich after mixing the crab paste together.

🥂Yuzu Sorbet with Melons and Sesame Crisps
A bottle of good sake can’t be missed to pair with these dishes and we were happy to be treated extra glasses. Such a fulfilling and enjoyable dinner afterall. Returning soon!
