通常都係去皇后大道中多啲, 但都幾年無幫親過'羅富記'. 以前嘅我, during summer holidays, did not pay much attention to 食物的.忽然稔起, 好想食炸醬面同鯪魚球 - good. 順便 review 吓呢間比人忽略了的舊色店. 順便 review 吓呢間比人忽略了的舊色店. Is it still competitive?


炸醬面 - A dried noodle dish with shredded spicy pork. Its funny how in my mind, my definition of Cantonese Ja Jiang Men has always been similar to 羅富記's version... whereas most other shops use so much Ketchup sauce or only ever so briefly marinate the pork, only the external surface has an artificial orange. NOPE. Doesn't happen here still, and the taste was just awesome. Pork was around 2/3rds lean and 1/3rd fatty, perfectly balanced to the point I was surprised. I've tried this dish recently at 何洪記, 池記, plus quite a few other places - none were closely satisfying, unbelievable.
I was also quite surprised at the noodle's quality here, which was perfectly textured and had an eggy taste - it was slightly chewy yet not entirely so crunchy, a different style to a lot of shops - its really suitable for 撈麵. (I think this type of noodle does not work well in 湯麵, as its not crunchy or 彈牙 enough). Not much alkaline taste.
The soup here, same as wonton soup, also had a Prawn Shell rather than prawn roe taste, with Dai Dei Fish flavour, which I did not expect in a run-down shop like here. It did have slight MSG taste but it wasn't overly dry, afterall MSG is unhealthy but when used correctly it does enhance flavours, there's a reason Ajinomoto invented it. The soup was way better than 庸記's rubbish fully MSG dependent version.
鯪魚球
I've also had this at a few shops already, one is 池記 and others in the dim sim restaurants. The one at 羅富記 has always been different, as it was deep-fried a bit more. I must say even though their version is better than most restaurants, it was ultimately too starchy, rather than naturally 打到起樛. It depended too much on other filling agents, which also robbed it a bit of its natural 鯪魚 taste. The 蜆 here is also better than most shops I've tried so far, it actually has the Umami filled 蜆 taste and a fair bit of alcohol, the latter slightly over-powering but perhaps that's its strong point in a way?
In a way, I'm not fully satisfied by the 鯪魚球 method here. However, relatively speaking, most shops in Hong Kong really have very bad fried 鯪魚球... surprisingly, no one gets it really right. In that sense, credit must be given to this shop, although deep under I wished they could make it just a tad more better/sophisticated.


In a way, quite surprised how well this shop's food quality held up, against its many competitors. The wonton noodles eaten by someone else was also deemed to be quite good (except for the noodles). Cannot remember the congees here, but from memory, they're a bit artificially thickened - but will save that for another accurate review, if I do come back.
