Need I Say More apart from Uploading Photos PS: There are actually at least 20-30+ restaurants in HK which serves so-called fresh chicken, provided you search around carefully! Some I've already covered too. I shall review more of them if I remember to! Some of them use Mainland China's so-called fresh chickens, some are sourced from Hong Kong farms. Not all of them are good, and that's a harsh fact. Fresh chicken is not the end all and be all, many variables are also important

PS: There are actually at least 20-30+ restaurants in HK which serves so-called fresh chicken, provided you search around carefully! Some I've already covered too. I shall review more of them if I remember to! Some of them use Mainland China's so-called fresh chickens, some are sourced from Hong Kong farms. Not all of them are good, and that's a harsh fact. Fresh chicken is not the end all and be all, many variables are also important and needs to be considered in the overall equation, as I've honestly had some pretty decent 冰鮮雞 too, but equally below-par 新鮮雞/日鮮雞. I just know that the chicken from this restaurant is one of the better ones I've tried so-far. In fact the Fresh Chicken's unique Qualities plus the resultant cooked outcome experienced at this shop, carried a noticeable discrepancy compared to 尚膳坊's fresh chicken version, which I had just covered not too long ago and is located right opposite from here [http://www.openrice.comrestaurantcommentdetail.htm?commentid=2091339].
The smoked chicken dish overy there was already pretty good and smokily tasty, but slightly tensed up probably due to either over-cooking or rigor mortis (or cold shortening) treatment problems during storage or sourcing, and that chicken over there carried less goodie chicken taste to here. I'm yet to ascertain whether its purely related to freshness, to its chicken genetics, it diet, or its recipe or its cooking ability. May be I will never be able to answer that question!
All I know, is that this chicken was sourced from within Hong Kong and its possible that this could have made some perceivable difference, who knows!
