To be honest, even the base of soy sauce, clam, pork bone, and fish broth is already incredibly flavorful, but when combined, it becomes difficult to discern the different layers of taste. As one gets older, even if one enjoys a salty meal, there is a desire to truly savor the essence of the broth itself. The noodles are perfectly fine, and the intensely flavorful broth diminishes the importance of the noodle's ability to hold the soup. The chashu pork is cooked at a low temperature, resulting in a tender texture without the smoky aroma. This technique also prevents an excessive amount of oil from floating in the soup, which is reasonable. However, the small side dish priced at $70 offers a lower cost-performance ratio. The chicken skin and squid roll is crispy on the outside and chewy on the inside, and it delivers in terms of flavor and texture. But considering the portion size, the pricing seems overly ambitious.
