Ying Kei Noodles 英記麵家 
is the collective memory of many students, since it has stood near Hong Kong University, St Paul's College since 1994. They have managed to keep the place squeaky clean all this time: no dirt on the floors, tidy shelves, clean washroom and tables you actually feel comfortable laying your white sleeves on. This is an amazing feat given the history of the place, and the notoriety of Hong Kong noodle shops for their lack of hygiene. I was impressed and appreciative at the same time.

We sat down near the entrance of the long and narrow store, with full view of the noodle kitchen where the same elderly lady who took our orders pounded on the noodle dough. Ying Kei was famous for two items, and we ordered them both.

It was a slow Sunday morning and the place had barely filled up when the BBQ Pork (Char Siu) Noodles 叉燒湯麵 ($30) arrived. I substituted the usual egg noodles for flat rice noodles. The BBQ pork was homemade, and what a difference that made - the meat was succulent and juicy, with a strong sweetness to it, despite only being marinated only with oyster sauce. I learnt that meat from the pork neck was used to allow for a better chew. I couldn't stop eating and they must have knew it because the portions were very generous, too!

The Deep-fried Wontons 炸雲吞(HK $30) were fried outisde on the porch behind the restaurant, to avoid the gas and fumes clogging the dining area, a testament to the attention paid to preserving a clean dining standard. Hot and piping from the fryer when they arrived, each bite of the wonton was crunchy, and steam poured out from the densely packed dumpling core, made of minced pork and shrimp. Truly wonderful.

I left satisfied and relaxed, thanks to the comforting food and the equally soothing environment. Such was the power of a humble noodle shop.
