Amber has been on my wishlist for years and now I have finally tried the famous sea urchin which is going to be taken off the menu soon.Started off with the mushroom tea which tasted like Bovril.The we had these adorable porcini mushroom macarons with pumpkin filling.Then came a huge acorn with a beer batter beignet and a crispy leaf made of pumpkin.The star of the show was the sea urchin with smooth and silky cauliflower puree covered in lobster jelly and caviar.It was simply divine!+++++++++++

The dishes I had were served at the Taste of Hong Kong from the 10th to the 13th March 2016.
Twelve of Hong Kong’s most celebrated restaurants, such as Amber, Tin Lung Heen and Yardbird came together to serve a premium menu of more than 40 signature dishes on small plates and iconic one-off festival creations-all in one location.

細吃一口,蛋糕一點也不甜膩,反而有一種像吃Haagen Dazs士多啤梨雪糕的清新感覺,入口即溶。看看內裡構造,慕絲軟綿綿像綿綿冰,但那味道自然不能與普通港式甜品鋪的綿綿冰相提並論。那種輕描淡寫的果甜,猶如回想起當年初戀的感覺,遙遠,但依然煥然一新。

除了L'Amoureux,另一個很有意外驚喜的甜品是Tarte citron meringuee檸檬蛋白撻。我一直都不愛吃檸檬系列的甜品,嫌它太甜,甜過於酸,味道奇怪。這檸檬蛋白撻完全沒有這問題,那檸檬Lime味很開胃,吃完令人更想再吃下一個!

把檸檬蛋白撻切開,檸檬蛋黃餡和蛋白清晰呈現眼前,甜品面的蛋白柔滑如絲,真的很難可以吃到那麽高質素的蛋白。四十元,真的不能再抵了。

士多啤梨非常新鮮,而最有新鮮感的是那柚子味慕絲,這真的是第一次嘗到呢。淡淡的柚子香味配合果酸味,給人一種夏天的感覺。(又突發奇想,其實這味道作香水Base也應該很不錯:D)

甜品面上的芝士像Sift Red Velvet Cup Cake上的Cream Cheese質感,Cheesey not cheesy。若要形容那口感,那應是像在法國街頭享受芝士味新鮮雪糕的感覺吧。

以上都是我認為是超值的Amber甜品,再談的則是一般般的蛋糕。

蛋糕內夾著是紅莓。這紅莓倒也新鮮,比上一次在Ce La Vi吃到的甜,加分。不過,餅底又要減分了。千層蛋糕重點在於那鬆脆之感。眼看這餅皮算是多層,想不到吃起來有點「韌勁」,較為失色。

更奇怪的是,這甜品有一種藥水味道。把Mont Blanc解剖(賣相不太美觀),可清晰看見栗子裡面也是忌廉、鮮莓和栗子蓉。再每層淺試,忌廉不及Angelina Paris的新鮮滑溜,感覺有點像平時西餅店的忌廉,失望;鮮莓是醬還是果肉,我也吃不清楚;底下的栗子蓉為最出色的一部分,栗子蓉本身的甜味自然流出,比Angelina Paris如沙糖的餅底更深刻特別。解剖完畢,再分開吃面頭的栗子蓉,原來是這兒出事,藥水味又再一次浮現。Amber這麽多款甜品,我覺得這是最失色的一款了。

再談這慈善朱古力(HKD30),不算貴,其他咖啡店的朱古力也差不多是這價位。我尤其喜愛這杯上的玫瑰雕花,非常精緻,我已把它好好收藏於家中了。

不過,味道就麻麻了。很明顯,這杯朱古力是沖粉的,喝起來跟普通茶餐廳的沒什麽分別呢。但又有什麽所謂呢?三十元也不算貴,我就當是用了三十元買那玫瑰雕花,也值得。

明天便是慈善售賣最後一天了,很爭扎要不要多買首五款甜品作最後回味。畢竟,可以一嘗二星米芝蓮主廚功夫的機會實在難得,可遇不可求呢。

I was in Central with boyfriend to photograph this year's Chinese New Year decorations. When we arrived at Landmark, I saw a poster that said there was a temporary Amber pop up store where they were serving cakes and coffee/tea/hot chocolate and all proceeds would go to the Make a Wish foundation.When we arrived, most of the cakes were gone. This is a pear tart with hazelnuts ($30). The pate sucree was perfectly crumbly yet the whole tart didn't fall apart when I bit into it. The pear was a poached and wasn't too sweet. There was a small amount of creme patesserie to hold the pear in place. All was matched with chopped hazelnuts. An excellent combination. This was really REALLY good and I would have ordered another one but this was the last one.

For $15, you could order a drink. I ordered a hot chocolate. The staff told me the decoration was rose. Um...I guess if you squint. Like very hard squint. Anyways, the hot chocolate was ... weak. It was not chocolatey. It just tasted like watered down brown water. McDonald's served me better hot chocolate.

Perhaps it was simply my table's foolishness in ordering the degustation menu (which means the whole table has nine courses of the chef's signature dishes), and perhaps the other items on the menu are delightful, but I certainly have no desire to sample contemporary French cusine at Amber ever again. Anyway, in the hope of saving other innocent diners from wastin

Perhaps it was simply my table's foolishness in ordering the degustation menu (which means the whole table has nine courses of the chef's signature dishes), and perhaps the other items on the menu are delightful, but I certainly have no desire to sample contemporary French cusine at Amber ever again. Anyway, in the hope of saving other innocent diners from wasting their time and money on this overrated place, I will put down a few salient points of my experience below.

(1) The food. Other reviewers have provided pictures and descriptions of the degustation menu (some vary slightly from what we had in February of 2016, but much of it is the same), so I won't go into detail here. Suffice to say that the unanimous verdict of our table was that not a single course was a success, with the sole exception of the wagyu beef (and the credit for that probably goes to the cow, rather than the chef). Everything else, from the steamed fois gras (a heroic attempt to offer something different from the typical pan-fried style, but which unfortunately only conjured up the sights and smells that avian veterinarians are subject to during their training) to the prettily done but sickeningly sweet desserts, was just a painful exercise in repeatedly sampling mystery substances soaked in overpowering sauces.

(2) The service. I'm sure all the waitstaff tried their best, but really, is that what a restaurant wants its patrons to say of its staff? "They did their best"? I almost feel bad writing this down, since I am so certain that they did indeed all do their very best, but wide-eyed effort cannot make up for English so garbled that the introductions to each dish were incomprehensible, or the fact that our first three courses arrived almost on top of each other and then the fourth and fifth arrived only after a tedious 25 minute wait. Our table was also waited on in a very haphazard way, and the waiters gave the impression more of being anxious helpers rather than confident and trained staff with the knowledge of what proper service at a nice restaurant involves.

(3) The ambiance and seating. Well, the lighting and the atmosphere was pleasant, but the bench seat we were seated on sloped downwards ever so slightly, which became very annoying by the end of our three hour dinner.

(4) Finally, a number of miscellaneous items rubbed us the wrong way. Some of the tableware designs struck us as cutesy rather than elegant. For example, the bread plates had little slits cut into them so that the butter knives could balance on the bread plates sideways. Knives pointing upwards on a table is surely not the way to go at an elegant French restaurant. Another irritation: Our meal was for a birthday celebration, and so we were going to special order a cake. However, we were told, "No need, a complimentary birthday cake will be provided". But we did not get a cake; instead they served us with mignardise (bite-sized confectionary), which is - well, not a birthday cake.

The three of us spent approx. HK$8,000 which included one carafe of wine. Gaddis at the Peninsula for the three of us for a similar meal (but with champagne, whisky, and wine) was only HK$5,000. The service, food, and ambiance was also much better. So if you're looking for a place to have a nice dinner, I would recommend booking Gaddis, rather than suffering through the amateur efforts of Amber.

Paris-brest ($40)The last piece of cake that I am going to try from Amber. The praline flavoured cream was sandwiched between two fluffy choux pastry. The pastry was light with a soft texture, it was surprisingly not as sweet as I expected. The smooth cream and the soft choux just made a fun and sexy dessert to share with your loved ones. I really wish the Amber pop up shop is going to continue because it was so convenient for Central busy people to buy one to go before/after work!

With warm ambient lighting, a bronze chandelier is the centerpiece of the restaurant. We were seated at an oval table, with nice, comfortable cushions and armrest, offering a really cozy and relaxing environment for the meal. On this front Amber is certainly setting the stage for an enjoyable evening, and strengthening my expectation for a wonderful dinner.

In order to try more of the signature dishes, we had ordered the 9-course degustation menu and I also had the wine pairing. And like many such restaurants there were some snacks offered for starter, which were delicately prepared and tasty.
The first course was a Ebisu winter oyster with seaweed, potato and raw shallot slaw in tomato water cloud with chipolata crumble. The oyster was cooked in low heat to maintain its flavor and freshness, with a nice complement on the crumble and vegetable, served in a beautiful ceramic 'shell'. The wine paired is 2012 Franz Hirtzberger Riesling from Wachau Austria. A bit rustic in taste for Ivy but I am good for its flavors.

Next was Hokkaido sea urchin in a lobster jell-o with cauliflower caviar and crispy seaweed waffles. This is one of Amber's most famous dishes and after tasting I can understand why. The intensity of the flavors from the sea urchin, lobster and cauliflower caviar matches so well with the seaweed waffles, and the jelly and sea urchin texture also contrasting the crispy waffles, bringing the best of both. In addition, the wine paired was also perfect - a Junmai Daiginjyo from Tanigawadake.

The third course was parsley root cooked in ash and salt with shaved black winter truffle, pairing with 2010 Schiopetto from Friuli Italy. The parsley root was nice and flavorful, but it was the truffle which really stolen the show. The fragrance was simply phenomenal, directly hitting your nose even at a distance. Again the wine paired was a perfect match for this dish.

The fourth course was cuttlefish a la carbonara with quail egg yolk, pearl onions patals and smoked alsatian bacon. My other favorite on the night, the cuttlefish was prepared in a way to look like fettuccine, but without any rubbery texture. So delicious that I finished in no time, and the wine paired was 2010 Champ Divin from Cotes du Jura, which reminded me a bit on a Montrachet I had before.

Fifth was duck foie gras steamed with fondant daikon, radish and seaweed broth. A much more refined and delicate style than the traditional pan-fried version, with the acidity of the daikon balancing the fattiness, I would say this dish did not bring out the flavors of the foie gras for my liking. On the wine, the off-dry 2011 Schlumberger Pinot Gris Grand Cru Spiegel had a good aroma of Indian mango.

Coming to the main course Ivy had Miyazaki wagyu beef roasted with dulse seaweed and red cabbage slaw oxalis, horseradish and pepper berry emulsion, while I had line caught turbot with salsify tagliatelli, Jerusalem artichoke puree and brown butter sabayon. The turbot was really good and fresh, with the thickness so impressive that I could not imagine how large this fish should be. Interestingly as well, it did pair quite well with the 2011 Pares Balta Indigena Garnacha from Penedes Spain.

Approaching the end of the meal I had some unpasteurized cheese, matured by Bernard Antony. Not a strong cheese person I had picked Camembert and Morbier, Both were very good and also paired very well with 2011 Chateau des Fines Roches Chateauneuf-du-Pape.

For the two desserts the first was Amaou strawberries with hibiscus jell-o and yuzu granita, which had nice acidity and sweetness and highly regarded by both of us. And it was even more amazing when the 2008 Bella Ridge Estate Kyoho, with the signature Japanese grape variety matching well with the yuzu and strawberry flavors.

The other dessert was Kacinkoa 85% chocolate with ganache, fisherman's friend dust, peppermint and white chocolate sorbet. The rich chocolate flavors wrapped up a nice dinner for all of us, with the 2011 Le Plan Vermeersch Grand Territoire Doux from Cotes du Rhone accompanying. By this time I was already a bit drunk and almost forgot the coffee and sweets which I had later on...

On the service Amber is very good, I am particularly impressive that they checked with us whether we prefer something than cheese during the meal, as in our culture it is not something everybody liked. Ivy got a poached pear which was tasty, and this got Amber a much more satisfied customer than I would imagine if Ivy was asked to just take whatever cheese they offered. And during booking they also asked me whether there is any celebration on the day. In the end the restaurant provided Ivy a small box of macaron to celebrate her coming birthday.
This wonderful meal costs $6,404 and certainly is not something affordable for most people on regular basis. But I would not rate it as overly expensive if considering the quality of the food and all the fine details in preparation and serving. By flipping through the wine list it was also quite reasonably priced for such a high-end restaurant. If there is a special event then Amber would be one of my choices, to both impress and provide a nice memory for all present.
My overall rating for the restaurant is 75/100.

Cheesecake vanille de madagascar ($40)It was really smooth with a prominant villana flavour in each bite, you could even see the vanilla seeds from the almost glass reflecting smooth service of the cake. The bottom crust was thin and crumbly, just firm enough to hold the whole cake on top. The presentation was just amazing and I will be coming back for more again!

Since the Amber cake pop up shop opened. I have been eating cake every day. Haven't you heard of one cake a day, keeps the doctors a way? 
Today I have try this chocolate raspbeery tart. The chocolate was not too sweet but not too bitter at the same time. The chocolate mouse on top was creamy and smooth as hell. The raspberry tasted fresh and it balances out the slight sweetness from the chocolate. 

The tart base was butter and dense. It won't crumble even you just bite into the cake straight away. 

This would be my go-to cake whenever I am craving for chocolate!

Since I am obsessed with Amber recently, I am going to try as many cakes as possible at their pop-up shop. Today I have tried the famous French Mont Blanc which is basically just a mountain of puree sweetened chestnut. The Mont Blanc from Amber was topped with some candy chestnuts and some cute mini meringues. What disappointed me was the flavour of the chestnut puree which tasted a bit artificial to me, I thought chestnust should still be in season? It wouldn't be too hard to find quality chest

The tarte fraise yuzu was covered with loads of fresh strawberries, on top of some hidden fruity yuzu mousse. 

At the bottom, it was sort of like a cake base tart. It was semi-crunchy as it was mostly cake filled inside the crust. 

It was a light cake to enjoy and it would be a perfect choice for ladies if you are looking for a sligthly healthier alternative while indulging some nice pastry from one of the best restaurants in Hong Kong.

真係超級難得嚟Amber食啲咁貴價咁高卡噶甜品,雖然我真係好鍾意食甜噶,不過咁貴我一般都好難可以食到。今次有得食仲唔食盡佢 先嚟翻兩杯welcome drink,雖然睇落去好似檸檬水咁,不過佢噶味道係酸酸甜甜,好開胃 餐前麵包有四種,有些少熱,而且聞落去好香配噶牛油有甜同唔甜兩種,好細膩 法式芝士拼盤,有幾種唔同噶cheese。芝士味非常濃郁,配紅酒一齊食會更加好味 Raspberry,下面係馬鞭草檸檬雪糕,檸檬味同馬鞭草味道融合得非常好
