Restaurant: 容記小菜王

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 現時香港既港式小菜好多都粗製濫造,一係大集團經營以致間間餐廳都一式一樣,了無新意,一係就成名後難以維持水準。幸好今次遇到呢間仍然具有昔日香港高質既中菜館,成名多年後水準仍得以保持,實在難能可貴。今次由於只得我同老婆撐檯腳,所以我地只係叫左兩味餸:招牌沙拉骨同埋濃湯手打魚腐浸勝瓜。招牌沙拉骨呢款城中酒樓必有既小菜,整得好食既真係所剩無幾。而容記既招牌沙拉骨,可以話係相當高水準,可能係因為師傅盡得沙拉骨創始人容哥真傳之故吧。人地話沙拉骨重點係沙律醬,其實絕對唔係。重點真係離不開外脆內嫩既排骨。而容記既沙拉骨,絕對做到呢一點,加埋出面份量適中既沙律醬作點綴,酸酸甜甜,令人食指大動。咁先係香港中式餐館應有既質素。濃湯手打魚腐浸勝瓜看似平平無奇既呢款家常順德菜,其實都可以顯露出師傅準備充足。濃湯係咪足料香濃,真係一試就知,而呢度既湯頭絕對算得上高水準之作。濃湯同魚腐,兩者相輔相成,兩者都係魚味香濃,鮮而不腥,有咁既效果,薑既作用相信應該居功至偉。加埋新鮮勝瓜,吸收濃湯精華,軟身之餘,亦保留著新鮮勝瓜既微微脆口。加埋香芹作伴,令整道家常菜從此變得不再平凡。值得一提係呢度既絲苗香米。 如果絲苗米唔香

值得一提係呢度既絲苗香米。 如果絲苗米唔香、咬落無韌度,我食返珍珠米唔好? 呢度既絲苗香米令人驚喜,絲苗米香,口感韌度亦恰到好處,用小菜佐食,簡直一流。
