今期將軍澳的陳儀興又搞搞新意思:跟老夫CROSS OVER。  XX日報報導<期間限定>,所以要試試。  無奈假日晚市時常常客滿,即使平日光顧,也幾乎滿座。不過平日光顧,可以坐鬆D,可以慢慢食,無需限時用餐,不用CHUR。就座洗過杯盤碗筷後,點了几款老夫子系列的小菜。以前老夫子四格漫畫四字成語及卡其色草紙內頁,是小時候的回憶呀!如今餐墊是四格漫畫設計,小菜亦以四字詞冠名。耐人尋味 鹹魚蓉蓮藕煎肉餅 含綺your炳,一碟有八件。嗅覺:豬肉香,還有淡淡的<含綺>香。手感:筷子夾取,很墜手。煎過後,外層較香脆,以匙羹分切,要比少少手力。視覺:外層金黃,內層色澤較淡,以蓮藕的灰粉色為主,豬肉底色不明顯。拆開,有細碎的蓮藕粒粒,芹菜粒,豬肉,蝦米?口感:蓮藕粒脆口,豬肉起膠彈牙,但有未斷開的筋膜。估計是人手剁肉餅,非碎肉機。味道:因鹹魚的存在,單食會覺得鹹度高。但可沾喼汁,以喼汁的酸來中和肉餅的鹹。白粥 潮州粥,粒粒分明,可以用筷子夾起享用的粥。 肉餅有鹹魚,捏碎放在白粥裡,撈粥一流。一舉兩得 鹹魚肉絲韮菜花 類似小炒皇,韮菜芽菜肉絲,不過加入<含綺碎>,就多了鹹香。爽口帶甜的韮菜有重要的

很多餐廳會製作薯仔牛柳粒,但這碟改用蕃薯。
牛柳粒跟炸過的蕃一起翻炒再勾黑椒芡汁。
牛柳粒帶鹹,反而襯托出蕃薯的甜。

份量對我倆來說是剛剛好。
黃鱔表面無漿粉,可以看到黃鱔的切法,每件皆有魚背魚腹。
厚身黃鱔加熱後收縮,變得彎彎曲曲,口感不脆身。
