侍應話係臭豆腐味! 相信佢心底裡笑緊我無知....
香港風味嘅臭豆腐我完全唔覺臭, 但從未食過聞過內地風味嘅臭豆腐,杭州酒樓嘅臭豆腐臭非筆墨可形容!
近期有兩款食品食過幾次都幾失望,
一款係蔥油餅, 另一款係鍋貼.
香港叫蔥油餅, 杭州酒樓稱為家常餅, 相信係內地叫法吧.
除咗點鍋貼, 重有蔥油海蜇,小籠包,酸辣湯,蟹皇翅同蝦爆鱔麵.
蔥油海蜇 : 海蜇爽脆, 滿分!
鍋貼 : 終於食到外形同質素似樣嘅鍋貼, 首先 size 正常無偷工減料, 唔似得依家坊間嘅鍋貼鬼噤細. 另外鍋貼底煎得夠燶, 所以夠脆, 餡料足夠味道適中重有爆出黎嘅高湯, 又一個滿分作品!
小籠包 : 講外型我都係中意有18個褶嘅小籠包, 我食小籠包唔中意落任何調味, 杭州酒樓嘅小籠包高湯足夠但味道頗淡, 都係鼎泰豐比較啱我.

食到依家D臭味散得7788嚕!

家常餅 : 蔥花及芝麻足夠,餅炸得外脆內軟,上枱時重係熱辣辣,滿分.
酸辣湯 : 味道有酸又有辣, 味道濃郁配料充足.
蟹皇翅 : 蟹皇味濃而且用料足, 每一啖都有蟹皇, 只係翅比較細少份量不足.
蝦爆鱔麵 : 蝦隻選用河蝦唔係海蝦, 所以size 偏細, 但口感極彈牙, 質素比另一間上海菜名店香港老飯店更高, 蝦肉比老飯店更實. 至於爆鱔嘛…. 黃鱔肉頗薄身, 由於經過油炸, 外層有小小脆口, 至於麵身用上較粗嘅麵條, 我自己中意幼麵條, 再加上湯底味道屬咸味, 我中意偏甜, 所以…. 失望.

離開嘅時間, 廚房又整碟臭豆腐出黎, 係我身邊經過!令原本無咩味嘅大廳又再勁臭! 嘩嘩嘩…. 敵人用神經毒氣! 撤退!

新一年就祝大家橫財就手吧! 既然如此, 吃紅燒圓蹄應該是最貼切的. 杭州酒家的圓蹄是我最常吃的那一家. 這菜式最重要是皮厚而腍, 內𥚃的肉剛熟, 脂肪和肉層次分明, 這裡當然有吧! 另外我最喜歡是這裡的醬汁, 濃厚之餘咸和甜的比便了剛剛好, 不會則重一邊. 說到這裏, 我就想用醬汁拌飯吃, 這是很有罪惡的一件事!

This restaurant, as its name implies, specializes in Hangzhou cuisine. The decor is nice, with touches of Chinese calligraphy and arts on the walls. You can also see many photos of the celebrities visiting the restaurant throughout the years. For starters we ordered three appetizers. The first was Lotus Roots Stuffed with Glutinous Rice in Syrup ($70). This is one of the signatures of the restaurant, with the glutinous rice stuffed inside the holes in the lotus roots and prepared in the syrup. On the bite you can feel the chewy texture of the rice with the slight crunchy lotus roots, a nice texture contrast. The syrup had a bit of sweet osmanthus, making it fragrant yet not overly sweet. A nice one to begin our meal.

The second starter was Pig's Kidney Special Sauce ($80). The kidneys were cooked well to make it soft, which was unlike the Cantonese style which generally would make it more crunchy by blanching. The special sauce was something I could not figure out, having some spiciness but balanced with a hint of sweetness and saltiness. Overall an interesting taste but not my favorite.

The third starter was Wine-saturated Chicken ($118). A common dish available in all Shanghai and Hangzhou restaurants, this one had a generous portion of chicken, marinated in the Chinese yellow wine sufficiently to impart the aromas and flavors to the chicken. I found the bitterness of the wine was a bit too strong and while I was not sure whether this was supposed to be the original style I just found that to be less appealing.

We each ordered a soup, with my mother having Fish Balls Soup with Water Shield ($48), my wife having Mandarin Fish Soup with Assorted Vegetables ($48), while for me it was Hot and Sour Soup ($40). Many people knew the hot and soup soup was my favorite but unfortunately I found mine a bit disappointing as it was not spicy nor sour enough. Comparatively it seemed the other two soups were much better. Next time I would try those instead.

For the main dish we had the Sauteed Fresh Water Shrimps with Longjing Tea Leaves ($268). I never failed to be amazed by the labor to remove the shell of these small shrimps, and it would take a while to finish all the shrimps required to prepare this dish. The shrimps were cooked perfectly, keeping the delicate taste and each showing a beautiful orange pink color. My only comment was that the tea leaves were virtually non-existence and did not add any aroma or flavor to the shrimps.

The other main dish was Sauteed Pea Sprouts with Crab Roe ($298). I found this one another of my favorite in the evening, with a nice presentation of the crab roe in the middle and surrounded by the bright green pea sprouts. The vegetable was in season, young and tender, plus the great taste of the crab roe getting it to another level of enjoyment. I also thought this dish was very reasonably priced if comparing with other restaurants. A must-order in my opinion.

With two Steamed Flour Roll ($76) and a bowl of rice ($14), the total bill on the night was $1205. The service was decent without any surprise, and overall I recommend this restaurant to someone who wants to try some authentic Hangzhou cuisine.

4. 糯米蓮藕
余其說是小菜,此菜式更像甜品,糯米甜醬釀入蓮藕煮制,蓮藕不是脆口款式,反而是粉口蓮藕,入口香甜,很適合小朋友享用。


杭州酒家與傳聞一樣,味道一流,更重要是侍應態度有禮,節日慶賀有如此菜餚絕對驚喜。

However because the appetisers were all very flavourful and without being too filling. Not to forget about the stinky tofu which most restaurants nowadays refuse to cook or simply because the demand is not as high as before.

The most impressive dish of all main courses was the eel with garlic, the eel were not meaty but you could in fact taste the freshness of it instead of the dead meat that were usually served by most restaurant with home-grown seafood instead of the wild one. The garlic were tender and taste just right without being over powering.

We would like to try more dessert but the appetisers and main courses took a toll on us and our appetite were simply totally satisfied, so we only had the red bean cake. It was still okay considering how full we were, the coating of it could be thinner but we cannot complaint anymore. Until next time.

生爆鱔背是今晚比較弱的一道菜,鱔味不足。蔥燒遼參熱爐上,我喜歡吃吸收了精華的大蔥。清炒杭州時蔬及杭州炒麵也不俗。點多一味家常餅大夥兒吃,芝麻令餅香口,蔥可以再多一點更好。香甜的桂花丸子完美的結束這個飯局。

杭州酒家對顧客服務值得讚賞,處處盡力用心招呼。對杭州菜有一定堅持,很多食材也從杭州運來,例如春筍、蘭花豆腐乾、龍井茶葉,甚至調味用的米醋等,認真講究。曾經睇過報導,老闆吳瑞康一向為杭州菜發展努力,堅持不做北京烤鴨、水煮魚片等,因為做了就不是正宗的杭州菜了,可見他對杭州菜的信心及使命感,值得我們讚賞。
