Shoku experience provides a joyful and open-spaced environment. The binchotan grill showcases fishes that can be set on the binchotan grill, grilled and oven-baked. The venue has a great vibe to it with the semi-glass private rooms showcasing colorful artpieces. We especially enjoyed the Hokkaido scallops which was lightly seared on the binchotan grill and simmered with garlic. The taste and mixture of the grill and garlic roasted on top was exquisite. Japanese scallops simply put are the best.
The Whole Live Abalone was also added with a touch of sauce which added to the flavors and gave the texture a nice aroma. The abalone was extremely fresh and the edges of the abalone were very very nice.
Finally the surf clams although sashimi was allowed having it lightly grilled with the binchotan charcoal provided a new experience that you wouldn't get from a typical sushi restaurant. The rawness and freshness from the Japanese surf clams were still present whilst adding a new touch from the natural aromas of doing it 'binchotan Japanese' style. The Japanese always have new ways of re-creating dishes that are traditional in form.
We accompanied the meal with their popular Japanese dressing tofu salad along with the Sakura shrimp truffle fried rice. This was a standout with the Sakura shrimp flavors crispy and aromatic and matched extremely well with the truffle. This was something unique and a combination that was very delicious.
The Prime Wagyu Flat Iron had very beefy flazors and a great texture to it. Finally the oven-baked fish was an amazing fish that must be tried. It is slowly baked and the flavors are infused with light seasoning that is mouth-watering!
