After going to Spring Deer, American Restaurant, Yung Kee, Empire City Roasted Duck and Lei Garden for Peking Duck, I believe Peking Garden is the best in the business. The duck is skinned in front of you and served right away to guarantee freshness.  Not to mention it comes with a great show.  What I would add is maybe more side dishes to serve with the bun. That's something Spring Deer did right, but ever since Spring Deer geared towards their tourist customers more, their quality has gone dow

Asides from that, Peking Garden is my go-to spot for Peking Duck. Their Chrysanthemum tea w/ honey is also a nice touch. I must also say that their atmosphere is a lot better.  It's very spacious, so I felt very comfortable while I was eating.  That's hard to find in a place like HK.  I guess you get what you pay for.
