Kokuryu in Wanchai is always my favourite ramen-ya in HK that I could never get bored with their 牛筋Black拉麵 𝗕𝗲𝗲𝗳 𝗧𝗲𝗻𝗱𝗼𝗻 𝗥𝗮𝗺𝗲𝗻 with its rich and strong broth. I am so happy for their new branch opening at Sheung Wan! Another outpost to fuel my ramen addiction🌟Stepping inside, it was like déjà vu - from the sleek, Tokyo-inspired interior to the steaming bowls hitting the counter, it mirrored the Wanchai vibe down to the last detail👍🏼But as a true die hard fan of Kokuryu, I couldn’t help but spot a few intriguing nuances at the new digs😎 The most apparent difference was the spicy wood ear. It’s more pungent and spicy with a crunch. The onion and scallion were more finely chopped for that perfect textural pop, blending seamlessly into the broth. The rest?
