立体派拉麵是我有bookmark的一家拉麵店,但一直未有特意前往。剛好這次和朋友在上環處理事務後,便行過來立体派拉麵吃晚餐。店舖門口在一條小巷,我們都錯過了路口,走回頭幾步,到了路口,下幾級樓梯才到達拉麵店。主餐牌分別有5款拉麵及1款沾麵為常設選項,當中的特級白湯拉麵和九味醬油湯拉麵均是主廚推介。選了前者,是曾經獲獎的一款拉麵,湯底以有機飼養的京都丹波地雞及籠目昆布精製而成,先試湯頭,濃郁鮮味,清爽不油膩。配料有低溫慢煮叉燒及溏心蛋,3大片的叉燒肥瘦相間,口感柔軟,有微微炙燒香氣。溏心蛋的蛋黃呈橙紅色,富蛋香,稍嫌略略熟了一點,不夠流心。拉麵麵條彈牙又掛湯,份量十足,吃完一整碗拉麵好夠飽肚!火炙豚肉擔擔沾麵,朋友選了Level 2的辣度。沾麵汁是以濃郁雞白湯與芝麻味增醬熬製而成,而辣醬是以秘製辣椒油混合3種辣椒所製,我和朋友都覺得Level 2的辣度已好夠辣!沾麵的麵條較為粗身,口感煙靭又掛汁。4大片的叉燒,味道微甜濃郁,但口感沒那麼柔軟。唐揚脆炸雞,炸雞大件,脆漿厚薄適中,新鮮熱焫炸起,皮脆而肉嫩多汁,微微鹹香,擠些檸檬汁及沾些蛋黃醬就更為滋味!店門隱蔽的一家拉麵店,由麵食以至小食都很好吃,份量又夠飽肚,值得再來試試。Read More

是次用餐感覺奇妙,食物質素其實令人會想回頭,但職員態度確確實實令人卻步。首先,朋友帶左杯飲緊嘅咖啡入黎,回想起的確唔係幾尊重餐廳但職員如果即刻提一句唔可以拎入黎或者我地會叫佢行番出去飲兩啖就dum左佢,但女職員係我哋坐低左一陣先話唔準拎入黎,一係幫你掉左去。另外,我哋用餐時間大概係17:00,暫時係一個堂食食客都無,食到走都無其他食客。但我地放底筷子一陣就想收碗,真係咁急急到枱面仲有兩碟小食都要收埋d筷子?感覺上有少少想趕我哋走嘅感覺,如果多人都真係會食完走,但根本無人,坐多一陣都唔可以?不過是次係女職員令人感覺不太良好,男職員正常操作。講番食物,係真係好食亦都值得一試。拉麵分別叫左:醬油雞拉麵,灸燒豚肉沾麵,雞白湯拉麵。整體麵質偏硬身,有咬口。醬油湯望落去清澈得黎,又同時有濃香嘅感覺。沾麵醬汁濃香掛麵,但麵質因爲偏爽口,如果用於沾麵可以軟身少少。雞白湯湯底濃稠奶白,香味十足,確實值得一試。小食:章魚小丸子,炸雞塊。兩款都外脆內軟又juicy。Read More
