first things first
1. this is an espresso bar, not starbucks - drink your coffee, have a quick chat and MOVE ON; ok, you get 10 extra minutes if you order a cake as well - coffee does not taste good cold, unless its a good ice coffee!!
now - why this is the best coffee in town.
beans - owner's family has been in the coffee plantation biz for way too long, so the quality of beans is top notch...
roast - two kinds, dark roast for local taste (blame it on the coffee chains for introducing this...) and light roast (have to ask for it). I prefer light roast because you can actually taste the coffee, definitely more acidic but the aroma is amazing (i guess coffee is pretty similar to cooking steak... what does a well-done steak taste like compared to med-rare??)
grind - on the spot, over-grind and coffee can get easily burnt, under-grind you miss the favour and the thick crema with bad texture
end product - espresso with nice crema and texture, best in town ( i've had three ristrettos in a row without getting a stomach ache)
price - not the cheapest in town (but still cheaper then those restaurants charging HK40+, ie, posto, classified, etc) but you are definitely paying for quality, and it is well worth it.
the barristers they are great as well... chatty with very good insights into coffee...
other coffees - latte, black, capp - all great.
