Dinner at Marmo was a rollercoaster of flavors. The smoked sardines were a definite highlight — rich, savory, and beautifully paired with the spread and rustic bread. The homemade white ham was decent — good quality, but nothing particularly memorable.The Cannelloni Pigeon Pasta is a must-try. The meat was well-prepared, and the pasta absorbed the juices beautifully, offering a rich and satisfying bite. The yellow chicken stew with rice was another standout. Don’t let the word “stew” fool you — this dish was far from ordinary. The chicken was clearly slow-cooked to perfection: tender, juicy, and delicately structured. The sauce was aromatic and layered, seeping deep into the meat, and the rice soaked up every drop of flavor. It’s a dish that reflects both technical skill and thoughtful execution.The tenderloin didn’t work for me, mainly due to the overpowering sauce that masked the natural flavor of the beef.
