Though the red colour of this soup may not be appealing, but this is a soup ideal for hot summer days as adzuki beans and kudzus both have a good "cooling" effect on the body.
Kudzus is a root plant, and has a starchy texture, and adzuki beans resembles red beans but only smaller and thinner in size.

Ingredient and Portion

Kudzu 96-128g
dace 2pcs
seeds of adsuki 80g
pork shank 240g
dried tangerine peel a little
candied dates 3pcs
water some

Method

Peel and slice kudzu.
Wash seeds of adsuki and candied dates. Parboil pork shank in boiling water for a little while.
Scratch off the inner tissue of dried tangerine peel. Scratch off the scale and remove the internal organs of the fish, wash and then shallow fry until golden.
Fill the pot with some water. Put in the ingredients and then heat until boil.
Cook for 2 hours. Taste with seasoning and serve.
