雞胸肉 300克
火龍果 1/2個
木瓜肉 80克
哈蜜瓜肉 80克
啤梨肉 80克
配料:
乾蔥茸及薑茸 少許
醃料:
鹽 少許
粟粉 少許
Seasoning
芡汁:
鹽 1/2茶匙
糖 1/2茶匙
雞粉 少許
粟粉 1茶匙
湯 2湯匙
Method
1. 雞胸肉去皮,洗淨,切粒,加醃料醃勻。
2. 鮮果肉分別切粒,用水加少許鹽稍浸,瀝乾水分,以免變色,備用。
3. 燒熱油,下配料爆炒,再下雞丁炒至九成熟,下已拌勻的芡汁,再下所有鮮果粒輕輕拌勻,即成。
Tips
各種水果不宜炒過火,且只可輕輕拌炒,以免其糊爛,影響其鮮艷色澤。
