自少已經知道陳儀興潮州菜,如今開立多家分店,心中就會比較各店的分別。而這家在鰂魚涌和太古之間的分號,個人覺得是座位最舒適的陳儀興。今晚在這邊工作,順便跟東區工作的朋友到此癲拿。就座後,職員先呈上一盤潮州功夫茶和鹹菜,打開味蕾。 凍大眼雞       即是魚飯,是靠海吃海的潮州特色<飯非飯>。整條魚附海鹽巴帶鱗片清蒸再晾乾,保證原汁原味。 魚皮帶鱗片,可以把整塊魚皮掀起來,夾取淨魚肉再沾鹹香的普寧豆醬,魚的鮮味就出來了。 魚背位的肉較嫩,魚腩位反而較乾身。 鵝三寶  滷水鵝肝 鵝腸 鵝肉 皆我所愛也。鵝肝  當然肥美,連那肝小葉也看不清。說白了就是膽固醇,但自己偏愛這美食。鵝肝口感軟綿綿,中間位仍是糊糊的 ,入口甘香。無牙阿婆都食到。 啡色鵝腸脆口,但又容易咀嚼。鵝腸中的油脂為單調的腸壁帶來油潤感。鵝肉已褪骨 ,可以大口大口享用。鵝肉有了鵝皮,可以嚐到肉香和油香。鵝肉跟白醋又是一絕,可以去除油膩感。 全賴滷水口味較淡,不死鹼鹹,可以突顯食材的原味。 註:曾遇過某餐館的滷水系列只得死鹹,㓤脷,食完要飲很多水。  太鹹就蓋過食材原味,喧賓奪主。果然,陰陽萬物之埋,皆惡極盛。   如今滷水之理,皆惡極鹹。  故既而未極則為福。就連墊底的炸豆腐,也可嚐到那淡淡豆味。 潮州魚丸肉碎煮汕頭白     如果要在潮州炸魚蛋和白魚做抉擇,自己會選擇白魚蛋。跟職員確認是白魚蛋後,所以點這款。    潮州魚丸雖不是鬆軟綿密,反而是爽口彈牙,魚味十足。至少唔係擦紙膠口感囉!湯中打撈到瑤柱,難怪有那熟悉的鹹鮮味。汕頭白菜吸盡鮮甜湯底, 無苦味。嚐過多件鵝三寶,終究來一份青菜才感覺得安心。 白粥      煮至糜爛的綿綿潮州粥,配<含鮮菜>一流。 胡椒鹹菜鮮豬肚湯    新鮮豬肚集爽脆軟滑於一身,厚身的軟滑,薄身的脆口,無需太多牙力就可享用,很喜歡這口感。淺啡色湯底胡椒味不太強烈,以鹹菜的鹹為主。 事後再來一盤功夫茶作結。今晚真係見到<星>呀!希望下次可以嚐試潮州反沙芋與蠔餅。…Read More

今晚和太太在鰂魚涌辦完事,發現這座新落成的大廈有不少餐廳,突然又想食滷水,就來這家陳儀興尚潮樓試試水準。餐廳位於大廈的7樓,裝潢明亮新潮,以新中式風格為主題,座位寬敞舒適。餐廳主打滷水鵝,亦有其他的傳統潮州菜式可供選擇,更有不少坊間少見的潮式手工菜。甫入座侍者馬上奉上功夫茶,入口茶香回甘,有水準。護國菜 $68先來一客坊間少見的傳統潮菜之一護國菜,是以番薯葉用上湯煮成湯羹,色澤翡翠泛光,入口脂香潤喉,齒頰留香,以為材料簡單,卻有始料不及的鮮香美味,加上香氣十足的瑤柱絲,為口感及味道加上變化。鵝三寶 $298鵝三寶分鵝肉、鵝肝及鵝腸,一次有齊三款個人最愛的滷水鵝部位,底下亦有豆腐伴碟,物有所值。鵝肉份量足,連皮帶肉,肉質柔嫩,鵝味濃郁;鵝肝口感粉嫩,味道甘腴醇美;鵝腸一咬爽滑脆口,同時保留有鵝脂的甘香。頭抽鷹倉魚片 $488以貴價的鷹倉起片香煎,鷹倉魚片每件都厚實大件,份量十足,香煎過後的鷹倉外層香脆而內裡肉質仍然嫩滑,加上頭抽醬汁透發奇香,同時又不會掩蓋鷹倉自身的魚香,一流。方魚炒芥蘭 $118方魚炒芥蘭上枱時仍冒煙,鑊氣十足,芥蘭重本只取最爽嫩的部佔,一咬爽脆嫩綠,清甜可口,配以方魚的獨有鮮香,十分惹味。潮州白粥 $15最後來一碗看似最簡單的潮州白粥,一呷口味清澈,帶有淡淡的米香,十分舒適暖胃。…Read More

滷水鵝三寶,鵝腸爽滑彈牙,鵝肝味道算不錯,唯鵝肉比較乾柴,以三百元來說,份量偏少。滷水汁不算味濃。九肚魚烙,蛋少魚多(!),蛋漿不算脆,和魚肉混合起來的口感比較軟。個人認為這種質感較一般蠔仔餅好吃。乾貝春菜煲,春菜很腍,亦被高湯浸走大部分菜味。很普通。咸菜胡椒浸台山蠔,比較特色的菜式。很重胡椒味(類似胡椒豬肚雞湯),咸菜不太咸,蠔有一點點腥(有些人會覺得這是鮮味)。味道還是不錯的。反沙芋頭,據說很巧功夫。由相片來說,功夫應該合格。有很清晰的芋頭味和糖衣味,不過個人不太懂得欣賞這道菜。埋單三個人1078元。總括,比一般集團式餐廳明顯較好(價錢相若),不過味道不算有驚喜。如果你吃飯旨在欣賞菜式,而不在於吃飽暖身,那麼可以試試海鮮款式(涷蟹、各種魚類),手工菜等,或許會帶來驚喜。…Read More
