在寫此食評之前,看過有些OR食家隨意地寫出不盡不實的食物價錢,激起我決心首次破例將餐廳的菜單全部列出,目的只是希望各位不要誤解以為高級餐廳,價錢必定貴,其次是不想少男少女被不盡不實的食物價錢"嚇到"。週末到澳門,只想著誓要以一嚐葡國名廚泡製葡式菜餚的心態前來.看過 Robocopo那食評,一下船便馬上致電澳門陸軍俱樂部訂位.那是一間超過百年歷史的餐廳(建於1870年),榮獲美食大獎的俱樂部餐廳據聞以前沒有對外開放。訂了七時.由於openrice把澳門陸軍俱樂部的地址打上了媽閣兩字, 於是預早個多小時坐上九號 巴士前往,上車後再詢問司機才知澳門陸軍俱樂部不是在媽閣, 而是在我們上站附近的不遠處,於是便立即下車從回上車起步點。天呀! 我們浪費了5元坐公車啊! 由於時間尚早,便在附近行逛,竟然無心地給老公在一間鐘錶店發現了他找了很久也找不到,在香港已經賣斷市的限量版手錶,於是便二話不說,把手錶買了下來。七時準時到達,由於獲預留的位子比較昏暗,影出來的相片也份外地變得微粒很粗,色彩也同樣地變得朦膿,希望各OR食評人見諒。餐廳裝修以南歐風格為主,內裡環境冠冕堂皇,氣派高尚,有半島酒店的級數,服務

七時準時到達,由於獲預留的位子比較昏暗,影出來的相片也份外地變得微粒很粗,色彩也同樣地變得朦膿,希望各OR食評人見諒。餐廳裝修以南歐風格為主,內裡環境冠冕堂皇,氣派高尚,有半島酒店的級數,服務生是葡國人,卻能說一口流利英語,也夾雜著半句廣東話呢!
傳統葡國青菜湯(Traditional Portuguese cabbage soup with sausage)---首先來了一碗盛著菠菜葉和葡國腸粒的湯料,湯與那碗湯料是分開上的;原先我們還誤會了侍應是否拿錯了鮮榨橙汁來,實情是侍應在你面前將透明壺內那橙色的薯蓉湯倒入盛著菠菜葉和葡國腸粒的那個碗內,給你熱吃.湯面清晰可見還有幾滴橄欖油.青菜湯啖啖薯蓉味,稀杰濃度適中,喝完湯後再吃菠菜及葡國腸粒。菠菜是白焯,青菜湯和菠菜也同樣淡味,全碗湯最令我印象深刻反而是葡國腸粒,雖為葡國青菜湯之陪襯,但口感極佳。
葡國腸炒蛋蘆筍(Saute'ed green asparagus with Portuguese sausage and scrambled eggs)---很有葡國特色的一個前菜,蛋與葡國腸及蘆筍同炒,炒完後再倒入杯形模具內,因此在我們碟上是一個杯形的葡國腸炒蛋蘆筍,蘆筍爽口,葡國腸味道是適度的鹹甜,有點像廣州臘腸。
鮮茄馬介休夾餅(crunchy codfish with fresh tomatoes in olive oil infusion)---超水準之作,從前對馬介休的愛吃指數只是一般,但如今吃過此處的馬介休夾餅,真想encore.弄碎的馬介休與薯蓉混和並包著類似紙包薄皮來炸.夾餅外層的紙包薄皮脆口非常,最精彩是馬介休餡料咬落口感像蟹肉混合薯蓉,肉質鬆散,馬介休在口中的微鹹香味四溢,雖然馬介休魚就是風乾鹽醃的鱈魚,或者稱其鹹魚,但是沒有廣東式鹹魚那種鹹得要命的感覺。
葡式海鮮飯(wet seafood rice club style)---感覺尤如鮮茄海鮮湯泡飯一樣,新鮮的蝦肉,魷魚,帶子和蜆肉的配搭產生出一種"鮮"的共鳴,那種"鮮"全滲進湯飯裹,啖啖飯都"海鮮味"十足.葡式海鮮飯用上蝦頭及其他海鮮作材料,配合橄欖油煎過的洋蔥、蒜頭、蕃茄,再加上鹽及黑胡椒等調味料,飯香四溢,味道鮮美,極為可口!
葡式烤乳豬/非洲雞伴薯仔批/沙律(Roasted suckling pig " Bairrada" style served with pala-pala potatoes and origans OR African "chicken marinated with garlic, onion, chilli and coconut roasted and served with gratinated potatoes and salad)---上次依著飲食雜誌坐計程車前往黑沙海灘的法蘭度餐廳 (Restaurante Fernando),只因為雜誌形容這裡的燒乳豬皮脆肉嫩,譽滿全城,吃過後大失所望,經本人嚐過的食後感是皮腍肉韌,不明白為何法蘭度餐廳的燒乳豬會譽滿全城.為何會是必食?我不容許這樣"時好時劣"的品質在這個航程影響了我的心情,好吃的食物使人愉快,不好吃的食物會使我帶著遺憾回港.澳門陸軍俱樂部的燒乳豬比法蘭度餐廳做得出色到不知多少倍,陸軍俱樂部不單皮脆肉嫩,還是嫩得很"交關",乳豬肉連骨也入味得很.在我看來,那些用來沾上乳豬肉旁邊深啡色的醬汁,該是將焗過的乳豬透過熱力來逼出的精華--"乳豬油"再混和深啡色的醬汁沾上乳豬同吃,老實說,在香港要吃到皮脆肉嫩的燒乳豬隨處都是,追求更高層次的味覺享受,味覺才會進步,因此我要的不單是皮脆肉嫩,同時也要乳豬肉連骨都必需入味,此處便符合我的要求了。還有, 特別一題旁邊的鮮番茄片,不是鮮紅色而是深紅色的番茄片,一看便分辨出這是外地入口的洋番茄呢!
葡式蒜蓉炒蜆(Saute'ed clams Portuguese style) MOP 66---很重的芫荽,白酒和蒜蓉味,蜆肉全部連殼上,沒有殼多肉少這現像,但蜆肉的體積不大,是一般香港蜆肉的體積,蜆肉弄得恰到好,沒有煮得過熟.
葡國特色甜品(Assorted traditional portuguese dessert platter)---其中有塊糕點甜品是煙燻味,像是新蒲崗得龍大飯店太爺雞的味道,但此味道代入甜品,味道`似乎怪怪的.
焦糖菠蘿伴椰子雪糕(Caramelized pineapple with coconut ice-cream and spices)---椰子雪糕
是自家製,椰子雪糕內有椰絲, 口感既香滑又重椰味.
