Heard good things about the pizzas here, been meaning to try for a long time. Went for lunch during a weekend, very bustling. 4 cheese pizza. Instead of the standard ones like Gorgonzola, the types of cheese used here were very thoughtfully chosen . Particularly worth noting was the truffle pecorino romano, a sheep's milk cheese infused with black truffles. The pungent truffle taste enhances the creamy, rich and earthy flavour of the cheese.
Also, Fontina DOP: a semi-hard cow's milk cheese from the northern region of Valle d’Aosta. It has a rich and creamy texture and a nutty, buttery flavor.
Taleggio, a soft mountain cow's cheese originating in the Lombardy region of Italy. Its creamy texture and soft consistency allows it to melt wonderfully into a gooey paste. Its mellow taste is milder than its intense aroma would suggest.
Dough was drier than others, but also crispier. This texture was perfect for all the cheesy goodness, as a dough which was slightly more moist would not be able to bear the weight of all the lusciousness.

Pizza with salami and nduja. Tried a bit only as the sausages were too spicy for me.

Khachapuri, which translates from Georgian as cheese and bread. It is pizza dough, shaped like a boat and filled with mozzarella, feta and egg with runny yolk. Suggested way to eat it is to stir the egg into the cheese mixture until it's smooth and stretchy and rip pieces of the bread boat off to dip in the cheese while it's still hot.

In summary: a pure delight. The dough and crust of the pizzas were simply outstanding—light, airy, and perfectly cooked with a beautiful char that added a delightful smoky flavor. The crust had just the right amount of chewiness and a subtle tanginess that showcased the expert fermentation process. Also, staff there really is to be commended- despite being short-staffed, servers dealt with everyone’s requests (some more demanding than others) in a cheerful, efficient and polite manner.
