剛試了這家韓國餐廳的招牌「豬手芝士燉雞」。可惜整體表現欠佳。首先,豬手完全不入味,筋位 非常韌,咀嚼起來吃力;鹽度過高,像是鹽放多了,並非慢滷入味的鹹香。芝士同樣偏鹹,混在鍋裡只會把油膩感放大。至於雞肉不嫩滑,口感同樣偏韌,基本上 咬不動。唯一較可取的是冬粉口感正常,但由於醬汁過鹹,吃幾口就要不停喝飲料/水來中和。我們兩個人點這一鍋,吃到一半便放棄——實在太鹹太膩,難以再吃下去。很可惜,作為餐廳招牌菜,無論調味、火候與口感都未達預期。味道:死鹹、掩蓋食材味道口感:豬手與雞皆偏韌,欠嫩滑配料:芝士鹹上加鹹、加劇油膩感配菜:冬粉尚可,但難抵醬汁過鹹整體:不平衡、吃力、難以完食建議店家(建設性反饋)1)豬手先行滷製入味,縮短筋腱韌度;2) 控制鹽度與芝士份量,讓鹹香而非死鹹;3) 調整燉煮時間與溫度,保留雞肉嫩度;4) 醬汁分級(少鹽/正常/重口味)供客人選擇。個人評分:🍽 食物 1/5 💰 性價比 1/5(僅就此菜品)Read More
