Ingredient and Portion
(一)乾水豬腰一對重約十二兩
(二)粉皮十張
(三)酒、鹽各1/2 茶匙

(一)生抽四茶匙
(二)老抽二茶匙
(三)花椒粉半茶匙
(四)古月粉3/4 茶匙
(五)糖1/2 茶匙
(六)麻油三茶匙
(七)辣油二滴
(八)熟油三茶匙
Method
(一)將豬腰剖開將筋全部起清,即用清水浸二小時,而且不停換水,將豬腰抹乾水分片薄,再用水喉漂沖數分鐘待用。
(二)粉皮切成三分闊之條子加入酒、鹽拌勻,然後再用水沖洗數次,最後用冷滾水洗滌,滴乾水分置於碟中。
(三)煮水一煲,待滾將腰片倒入泡兩分鐘即撈起,可置雪櫃內一小時,然後取出排放在粉皮之上。
(四)將調味汁混合淋於腰片之上,吃時可拌勻。
