新鮮菠蘿  1個
蝦仁    適量
蜆肉    適量
中型魷魚  1隻
白飯    2碗
雜豆(青豆粒、粟米粒及甘筍粒) 1小包
菠蘿粒   約2湯匙
黑提子乾  1湯匙
蒜蓉    1茶匙
乾蔥茸   2茶匙
黃薑粉   1茶匙
Seasoning
雞粉  1茶匙
鹽   1茶匙
生抽  1茶匙
薑片  2片
紹興酒 1茶匙
Method
1)海鮮料用薑片2片、紹興酒1茶匙飛水,瀝乾備用
2)將菠蘿頂橫切開1/4,棄掉/留下做蓋,另外3/4挖去菠蘿肉,用鹽水浸10分鐘,瀝乾備用
3)燒熱鑊,落1湯匙油,加入乾蔥茸、蒜茸及黃薑粉慢火爆香,加入白飯炒鬆至一粒粒
4)加入海鮮料、提子乾、菠蘿粒及雜菜,最後加入調味料炒勻即成
Tips
菠蘿肉起出後要浸鹽水,否則食後可能會感喉嚨不適
海鮮配料可跟個人喜好作出更改
