無糖豆漿 500ml
鹽滷 6g
水 3湯匙

製豆腐盒
微波爐專用兜
Method
1.把水溝入鹽滷成鹽露水備用。
2.把豆漿倒入微波爐專用兜, 並開動至大約8分鐘, 千萬不要煮至沸騰。
3.另取一空鍋,將鹽露水倒入,並輕輕搖動鍋子讓鹽露水平均;將豆漿由60cm高處快速沖入裝有鹽露水的鍋子,靜置20分,即可凝結成豆花(此時鍋子不要有任何移動)。
4.將豆花撈入豆腐模內,摺好棉布巾並蓋上木蓋,以重物壓25至30分鐘。
5.取出豆腐及棉布巾後即可熱食,或放涼後再冷藏。

1.鹽滷是在銅鑼灣大型超市博多屋有售,$22/450ml。
2.製豆腐盒是在大型日本雜貨店有售,售約$25。
