士多啤梨朱古力蛋糕

做了這蛋糕的下午茶甜點,所有蛋糕材料可於超級市場購買

Ingredient and Portion
30x20x3cm模具
蛋黃 3隻
蛋白 5隻
砂糖 50g
煮食用橄欖油 20ml
牛奶 70ml
可可粉 10g(2湯匙)
自發麵粉 90g
士多啤梨 8-10粒
奇異果 2-3個
Seasoning
鹽 半茶匙
檸檬汁 數滴
Method
1.預熱焗爐180C.
2.蛋黃用電動打發器打至淡黃色,加入牛奶和橄欖油攪勻,篩入可可粉及自發麵粉,攪勻備用.
3.蛋白以高速打發至起泡,分4次加入砂糖打發,加鹽及檸檬汁,中速打至中性發泡.
4.逐少把蛋糊放入蛋白中,以橡皮刀輕手以切拌方式(fold-in)混合均勻,不要打圈攪拌,否則會消泡.
5.倒入已舖上牛油紙的焗盆中,雙手提起焗盆在桌上輕敲一下使大氣泡排出
6.入焗爐中層以180C焗15分鐘.
7.出爐後馬上移出倒扣放在鐵架上.待蛋糕放涼一點後, 用刀把表層的蛋糕皮用刀削去, 及蛋糕切成上下兩片.
8.中層塗上打發了的牛油,再舖上奇異果,及蛋糕上舖上士多啤梨才完成.
Tips
1.中性發泡即用刮刀把蛋白挑起來會有個尖,並且有點顫動的感覺.
